Slow Cooker BBQ Chicken and Ranch Potatoes
SLOW COOKER BBQ CHICKEN AND RANCH POTATOES

RECIPE:
INGREDIENTS:
For the Ranch Potatoes
1 ½ pounds red potatoes 1/2 inch dice
2 tablespoons olive oil or canola oil
1 oz. packet ranch dressing dry mix
¼ cup water
For the Chicken
2 lbs. raw chicken drumsticks about 6 drumsticks, though you can use as many will fit.
1 cup sweet baby rays bbq sauce (not need to measure, just eyeball it!)
1 tsp. salt
½ tsp. black pepper
1 tsp. garlic powder (or onion powder)
1 tsp. paprika
¼ cup water
SLOW COOKER SIZE: 6-quart or larger
INSTRUCTIONS:
Add the potatoes, oil and ranch mix to a large ziplock bag, shake until well combined. Add the potatoes to an oven safe glass bowl, I use a one quart pyrex or a pampered chef quart glass measuring cup works well too. Place bowl with the potatoes into slow cooker. Add a 1/4 cup of water to the bowl of potatoes. If you don't have a bowl that will fit in your slow cooker with the chicken, don't fret; just make a bowl out of foil.
Season the chicken with the salt, pepper, garlic powder and paprika. Place the chicken next to the potatoes in the slow cooker (next to the bowl), add the bbq sauce on top of the chicken, and a 1/4 cup of water to the slow cooker with the chicken.
Place the lid on the slow cooker.
Set the slow cooker to HIGH for 4 hours.
Do not open the lid during the cooking time.
After cooking time is up, stir up the potatoes a bit.
When serving, spoon the extra bbq sauce liquid from the crockpot onto the chicken.

SLOW COOKER BBQ CHICKEN THIGHS RECIPE INGREDIENTS
2 lbs chicken thighs and chicken legs
1 Tablespoon chili powder
1 Tablespoon cumin
1 Tablespoon ground black pepper
1 Tablespoon onion powder
1 Tablespoon garlic powder
1 teaspoon salt
2 Tablespoons brown sugar (I added one more tablespoon for a sweeter rub)
1 Tablespoon smoked paprika
Olive Oil spray
Your favorite BBQ Sauce (I’m using Sweet Baby Ray’s BBQ Sauce)
Our crockpot bbq chicken recipe is super easy and starts with dusting 2 pounds of chicken legs and chicken thighs with the dry rub. To make the dry rub, mix the dry spices together. Taste a little bit of the mixture to see if you like the combination of flavors. I like a slightly more sweet bbq rub for our chicken, so I’ve added a one more tablespoon of brown sugar. If you like a spicier bbq chicken, add a bit more chili powder, black pepper or a touch of cayenne pepper.
Prepare the crockpot with a coating of spray oil.
Dust the chicken thighs and chicken legs with the rub, and layer it into the prepared crockpot. Drizzle on the Sweet Baby Rays BBQ Sauce, and spread it gently over the chicken using a basting brush or the back of a spoon. Don’t add additional liquid to the slow cooker, the chicken will release juices as it cooks.
Cover the slow cooker and cook on HIGH for 2 ½ to 3 hours until the chicken is cooked through or reaches an internal temperature of 165F. After the chicken is done cooking in the slow cooker, I add a little more bbq sauce and pop it under the broiler or onto the grill for a few minutes to crisp the skin.
If you’re taking this crockpot barbecue chicken to a potluck or picnic, you can cook the chicken in the crockpot or slow cooker until it’s finished, then take the chicken to your event and finish it on the grill there!

Pulled BBQ Chicken Crockpot Recipe
Doesn't get much easier than this. All you need is a crockpot, chicken breast and a bbq sauce of your choice.
Simply put the chicken breast in the crockpot and cover with sauce. Set the crockpot on low and allow to cook for 6 hours. At this time shred the chicken. You can either eat it as is, or for more flavor, put it back in the crockpot for 2 more hours. Either way, it's a great easy meal (and leaves plenty of leftovers).
