SLOW COOKER SAUSAGE WHITE BEAN SOUP

RECIPE:
INGREDIENTS:
4 cups vegetable broth
12 oz. beef smoked sausage sliced (find this near the kielbasa)
30 oz. cannellini beans drained (two 15-oz. cans)
2 cups cubed red potatoes
1 cup chopped carrots
1 cup chopped celery
¾ cup chopped red onion chopped
2 tsp. minced garlic
1 tsp. salt
1 tsp. black pepper
1 tsp. oregano
1 cup frozen kale chopped (or two cups chopped fresh kale)
SLOW COOKER SIZE: 6-QUART OR LARGER
INSTRUCTIONS:
Place the sausage, cannellini beans, potatoes, carrots, celery, red onion, minced garlic, salt, black pepper, oregano, and vegetable broth in a 6 quart or larger slow cooker and mix to combine.
Cook on HIGH for 3-4 hours or LOW for 7 hours or until the vegetables are cooked through.
Stir in the kale and cook on high for an additional 10 minutes or until the kale is hot but still bright green.
Serve and enjoy.

RECIPE:
INGREDIENTS:
1 lb. ground beef
¼ tsp. salt
¼ tsp. pepper
20 oz. pkg. Hurst'sⓇ HambeensⓇ 15 bean SoupⓇ mix
1 small yellow onion, diced
9 cups chicken broth (beef broth or water works fine too)
1 bay leaf
16 oz. salsa (I use fresh salsa from the refrigerated section of the store) WAIT TO ADD UNTIL THE END
1 oz. pkg. taco seasoning (about 2 tablespoons) WAIT TO ADD UNTIL THE END
Topping ideas:
green onions
tortilla chips
shredded cheddar cheese
SLOW COOKER SIZE:
6-quart or larger slow cooker
INSTRUCTIONS:
Cook and crumble the ground beef in a skillet on the stovetop. Sprinkle with the salt and pepper. Drain any fat. Add the meat to the slow cooker.
Place the beans in a colander, sort out any debris and discard. Rinse the beans and add them to the slow cooker. No presoaking is necessary. Do not use the ham flavor packet in this recipe, you can save it for another recipe if desired.
Add the onion, chicken broth and bay leaf. WAIT TO ADD THE SALSA AND TACO SEASONING, for too much salt and acidity can prevent the beans from softening.
Place the lid on the slow cooker. Cook on HIGH for 7 hours.
When the cooking time is up, remove the bay leaf. Add the salsa and taco seasoning. Stir.
Serve with desired toppings and enjoy!

CROCKPOT HAM & BEAN SOUP -- MAKE IT EASY MONDAY
This hearty soup made with ham hocks or a ham bone is easy and flavorful and always hits the spot with just a few ingredients! And the crockpot does all the work!
HAM & BEAN SOUP
1-2 smoked ham hocks and some diced ham chunks (if you don't like smoke as much, only use one ham hock.)
1 large diced potato
1 diced large carrot
1 medium onion diced
1 bag of dry great northern beans
Water
1 tbs Better Than Bouillon Ham Base
2 tsp thyme
1 tbs parsley
1 tbs Worcestershire Sauce
(celery, liquid smoke, mashed potatoes etc. optional)
DIRECTIONS:
Soak the beans over night in a large flat dish with water, covering all beans plus 1-2 inches of water on top. The beans will soak up that liquid to become re-hydrated.
Rinse beans and place in the crockpot.
Add water to fill to 3/4 full.
Add ham hocks and onion. Turn on high for one hour, then down to low for 4-5 hrs.
When ham hocks are tender, remove, debone and shred/dice and add back to the soup.
Add remaining ingredients and let go on slow another 1-2 hrs.
Serve up with a good crusty bread and butter!

INGREDIENTS:
2 lbs. ground beef
1 small sweet yellow onion
1 tsp. salt
½ tsp. pepper
2 tsp. Italian seasoning
1 tsp. onion powder
1 tsp. garlic powder
20 oz. mixed vegetables (two 10-oz. packages) I use Green Giant brand with carrots, corn, peas, and green beans.
38 oz. Progresso tomato basil soup (two 19-oz. cans)
1 cup water
SLOW COOKER SIZE:
INSTRUCTIONS:
To a large skillet on the stove top, add the ground beef. Add the onion, salt, pepper, onion powder, garlic powder and salt and pepper. Crumble and brown. Drain off the fat if your meat is greasy.
Add the beef and onion to the slow cooker. Add the bags of frozen vegetables.
Pour in the tomato basil soup and water. Stir.
Cook on HIGH For 3-4 hours or LOW for 5-6 hours.
Serve with french bread, garlic bread or dinner rolls. Enjoy!
