Meatloaf made in the crockpot
Use your favorite meatloaf recipe or follow mine. Allow 4-6 hrs. cooked on low and 2-3 hrs. cooked on high. Very tasty. My husband was very happy when he came home and saw that there was meatloaf cooking in the crockpot. If it looks too weird for you, then make up a bunch of gravy to ladle on the slices or put ketchup on the top. It's delicious and allows you to be cooking a hearty meal for your family while you're out running errands or at a soccer practice.

Meat Loaf

Ingredients
1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)
Directions
Preheat the oven to 325 degrees F.
Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

Slow Cooker Meatloaf and Baked Potatoes
RECIPE:
INGREDIENTS:
2 lbs. 7% fat ground beef
3 large eggs
1 small white onion, diced
1 green bell pepper, diced
⅓ cup ketchup
¼ cup milk
¼ tsp. garlic powder
½ tsp. salt
¼ pepper
25 saltine crackers, crushed
5 Russet potatoes
SLOW COOKER SIZE:
6-quart or larger
INSTRUCTIONS:
In a large bowl add the meat, eggs, onion, bell pepper, ketchup, milk, garlic powder, salt and pepper. Mix together with a spoon or clean hands. If meatloaf seems to wet to form into a loaf add more cracker crumbs or if too dry add a touch more milk or ketchup.
Form the meatloaf into a loaf in the slow cooker. Wash and dry the potatoes and wrap each of them in foil. Place the potatoes around the meatloaf.
Cover and cook on low for 8 hours without opening the lid during the cooking time.
Serve and enjoy!

RECIPE:
INGREDIENTS:
3 large eggs
1 cup diced white onion
1 cup diced red or green bell pepper
⅓ cup ketchup
¼ cup milk
¼ tsp. onion powder
½ tsp. salt
¼ pepper
25 saltine crackers
2 lbs. 10% fat ground beef
For the Sauce:
1 cup ketchup
1 Tbsp. brown sugar
1 tsp. mustard
SLOW COOKER SIZE:
6-quart oval
INSTRUCTIONS:
In a large bowl, add the eggs ,onion, bell pepper, ketchup, milk, onion powder, salt, and pepper. Crush the saltine crackers in next, and mix this all together with clean hands. Add the meat next, only mixing everything until it just comes together.
Spray a 6-quart slow cooker with non-stick spray, and shape the meat into a loaf on the bottom of the slow cooker.
Cover, and cook on LOW for 5-6 hours, without opening the lid during cooking time.
Scoop out the fat with a spoon, discard.
Mix together the sauce ingredients, and spoon over meatloaf.
Cover and cook for 30 more minutes on LOW if you want to heat the sauce. Serve and enjoy!
