OLD SCHOOL CRUMBLE COFFEE CAKE
This is one of the best cake you will make for your family and friends
They will be wanting you to this cake many times
Its actually a very easy cake to make
Ingredients
For the Cocoa Filling
1 cup light brown sugar
2 tsp cocoa
For the Streusel:
1 cup granulated sugar
1 cup all-purpose flour
2 tsp ground cinnamon
¼ tsp salt
1/2 cup unsalted butter diced
For the Cake:
3 3/4 cup all-purpose flour
2 ½ tsp baking powder
3/4 tsp salt
¾ cup unsalted butter , at room temperature
1/2 cup brown sugar
1 1/2 cup granulated sugar
3 eggs room temperature, large
2 tsp vanilla extract
1 1/4 cup whole milk
Instructions
For the Cocoa Filling
In a small bowl whisk together the brown sugar, and cocoa then set aside.
For the Streusel Topping
Add the sugar, salt, cinnamon, and flour to a medium bowl. Whisk together then add the diced butter. I usually use room temperature butter for this but you can use cold butter too.
Use your clean fingers to press and crumble the butter into the dry mixture. Once you have a crumbly mixture you can set it aside. For larger crumbles try pressing a large handful together and break apart into large pieces.
For the Cake
Preheat oven to 350F. Line a 9x9 inch pan with parchment paper, or grease it, and set aside. Sift the flour,, salt, and baking powder into a large bowl, whisk together and set aside.
Beat the butter, brown and granulated sugar in a stand mixer fitted with a paddle attachment or a large bowl If using an electric hand mixer. Mix until light and fluffy then Pour in the vanilla then add the eggs one at a time while mixing on low. Scrape the bowl down then add the milk and mix until combined.
Add the dry mixture to the wet and mix until just combined then use a spatula to scrape the bowl down and mix any stray bits in.
Pour half the cake batter into the prepared pan and smooth out. Sprinkle with half of the cocoa brown sugar filling and spread evenly over the batter. Spread the remaining batter over the cocoa brown sugar filling moving from the center to the edges top with the remaining cocoa sugar filing. Top with the streusel and pat down and bake at 350F for about 50-55 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 20 minutes before cutting.
Notes
Measure your flour correctly! Adding too much flour to the recipe is the most common mistake. The best, and easiest way to measure flour is by using a scale. If you don't have one then fluff your flour with a spoon, sprinkle it into your measuring cup, and use a knife to level it off.
If you're enjoying the coffee cake the next day give it 10-20 seconds in the microwave. It's SO good just a bit warm.
If you don't want to get your hands messy then pour melted butter into your streusel mixture and mix with a spoon or fork to get those clumps.
Try mixing in a cup of chopped toasted pecans with your streusel topping for extra crunch.

BAKING INSTRUCTIONS:
▪️ Bake in the oven at 350 degrees F for 9-12 minutes, or until a toothpick comes out clean.
▪️ Let your muffins cool for 5 minutes in the pan, before transferring to a cooling rack to cool for 10 minutes before adding icing drizzle.
