How To make Curried Beef & Potatoes
3/4 lb Beef Top Round steak
1/2 c Beef broth
1/4 ts Salt
3/4 c Chopped Green or Red Pepper
1 ts Curry powder
2 x Sm Potatoes, halved *
2 ts Cornstarch
3/4 c Chopped Onion
1 tb Cooking oil
Med Tomato, coarsely chopped * halved and thinly sliced (1/2 lb total) Partially freeze meat. Thinly slice across the grain into bite sized strips. set aside. Cook sliced potatoes in boiling water about 5 minutes or till tender. Drain and set aside. Meanwhile, for sauce, stir together beef broth, cornstarch, and salt. Set aside. Spray a wok or large skillet with Pam. Heat over med-high heat. Add onion and stir fry about 2 minutes. Add green or red pepper and stir fry about 2 minutes more or till vegetables are crisp-tender. Remove from wok. Add oil to hot wok. Add beef and curry powder. Stir fry 2-3 minutes or till beef is done. Push beef from center of the wok. Stir sauce and add to center of wok. Cook and stir till thickened and bubbly. Stir in onion mixture, potatoes, and tomato. Cook and stir all ingredients for 1 minute or till heated through. **************************************************************** Per serving: 251 calories, 23 g protein, 21 g carbohydrates, 8 g fat, 53 mg cholesterol, 414 mg sodium, 714 mg potassium.

INGREDIENTS
3 lb. Beef chuck pot roast, cut into medium bite size pieces
1 Yellow onion, peeled and diced
1 tbs Garlic
1 tbs Ginger, minced

1 tbs coriander
1 tsp cumin

1/2 tsp chili powder ( or more to your taste )
1 tbs tomato paste
1 large bay leaf or 2 small
4 cups water or beef stock
1tbs lemon juice
1 small bunch cilantro, chopped for cooking and garnish
6 - 8 Potatoes, medium sizes, peeled and quartered
2 carrots , peeled and cut bite size
1 Yellow bell pepper, cut bite size
1/2 small green cabbage
Salt and pepper to taste.
Thai Beef Massaman curry with potatoes
Welcome back! Starting off the Massaman curry series is the rich and delicious back of the pack recipe. This beautiful recipe takes up to 60 mins and feeds 4, the flavour is well worth the wait!

Ingredients - serves 4
35g Mae Jum Thai Massaman Curry paste
1 tbsp coconut oil (or vegetable oil)
1 tbsp fish sauce
1 tbsp palm sugar
350g stewing beef
300g potatoes
2 small onions
200ml water
400ml coconut milk
50g cherry tomatoes
50g peanuts
Red chilli (optional)

Preparation
1. Peel and chop the potato and onions into chunks
2. Chop the cherry tomatoes into halves
3. Cut the beef into 1 inch cubes
4. Pan roast the peanuts

Method
1. Heat oil into a large saucepan on medium/high heat, then stir-fry curry paste to build aroma.
2. Add 100ml water to loosen the mix, and then blend in fish sauce and palm sugar
3. Add beef, bring to light boil, cover and cook for 10 minutes. Add the remaining water, cover and simmer for a further 20 minutes
4. Then add coconut milk, potatoes and onions and bring back to an uncovered simmer for 20 minutes.
5. Add cherry tomatoes and roasted peanuts, stir well before removing from heat.
6. Garnish with thinly sliced red chilli just before serving (optional)
Serve hot with freshly made Thai jasmine rice

Mangalorean style Green Masala Beef Curry with Potatoes - Traditional Recipe
Green Masala Beef is a really flavoursome and delicious curry. I have posted quite a few videos with beef, but I feel the green colour gravy stands out. In this recipe beef is cooked in spices and freshly ground green masala. The fresh herbs used in this recipe enhances the flavour and colour of the dish. I prefer to use bone-in meat, as it enhances the taste of the curry.
This is a spiced Mangalorean style beef curry loaded with potatoes. Very much loved by the boys (Me) due to the potatoes in the gravy.
We at home prefer green masala over the red one. In fact, green masala gravies often make it to our dining table. Best served with some crusty bread/ kadak pav, sannas, appams or plain steamed rice.
