Beef Kofta Masala (Meatball Curry) Recipe | Restaurant Style Meatball Curry Recipe
Hello everyone! Welcome to my channel!
Today we’re making one of my childhood favorite meals that my mom used to cook, and that is kofta masala.
Kofta is the meatball (can be any type of meat or even potatoes & other veggies), and the masala is the curry or gravy part of it.
Recipe and amounts listed below:
INGREDIENTS:
For the beef:
1 ½ lbs ground beef (you can even use chicken, lamb, mutton, etc.)
½ tsp black pepper
½ tsp cumin powder
½ tsp coriander powder
½ tsp chili flakes
3 tbsp breadcrumbs
1 egg, whisked
1 tbsp fresh cilantro or coriander leaves
2 tsp Onion/garlic/ginger paste (process 1 onion, 4 cloves of garlic, and half a head of ginger with a little oil to make a smooth paste. The rest of the paste is for the masala)
Salt to taste
For the masala (gravy):
4 tbsp canola oil
Onion/garlic/ginger paste
1 cup canned tomato puree or sauce
½ tsp turmeric powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp red chili powder (or cayenne powder)
½ tsp garam masala (all-spice powder)
Salt to taste
1 heaping tbsp yogurt (regular or Greek)
½ cup water
Fresh cilantro to garnish
METHOD:
In a large bowl, mix the beef with all of the above spices listed under the ingredients list for seasoning the beef. Take about 1 tbsp of the beef mixture to make meatballs. It should make about 12-14.

Shallow fry the meatballs till brown on the outside. The inside of the meatballs will be cooked in the masala. Remove from the pan and set aside.

In the same pan, heat some oil and lightly fry the onion/garlic/ginger paste for a minute.

Add the tomato sauce, and all the spices - mix well.

Add the yogurt and salt, then mix again. Let the masala cook for a few minutes. Add the water and cook for another 2 mins on high flame.

Add the meatballs in the masala, and gently toss to coat all the koftas with the masala.

Top it with the cilantro leaves. Let it come to simmer, then cover and cook on low flame for 5-8 mins till the inside of the koftas is cooked and the masala has reduced a tad bit.

Serve with steamed basmati rice or naan bread.

Chinese Takeaway Style Curry Sauce w Meatballs
This Chinese curry sauce with juicy meatballs makes a great, comforting dinner.
The Chinese takeaway style curry sauce works so well with chicken, minced beef but my personal favourite is these homemade meatballs.
This recipe was handed down to me by my Dad, I remember eating it loads when growing up. that sauce has got a rich, savoury tang to it, and it tastes so comforting and filling that you just don't want dinner to end!

Ingredients:
For the meatballs:
▢500 g (1.1 lb) minced beef
▢1 tbsp soy sauce
▢pinch of black pepper
▢1 tsp minced ginger
▢1 clove garlic - peeled and minced
▢2 spring onions (scallions) - finely chopped
▢1 large egg
▢3 tbsp freshly grated breadcrumbs or panko
Chinese Takeaway Style Curry Sauce:
▢1 tbsp sunflower oil
▢1 ½ tsp turmeric
▢½ tsp Chinese 5 spice
▢1 tbsp mild curry powder
▢2 cloves garlic - peeled and minced
▢210 ml (little under a cup) chicken stock
▢210 ml (little under a cup) beef stock
▢210 ml (little under a cup) whole milk
▢1 onion - peeled and cut into large squares
▢1 red bell pepper - chopped into large chunks
▢2 tsp sugar (granulated/caster or light brown)
▢2 tsp Lime juice
▢1 tbsp Cornflour (Cornstarch)
▢2 tbsp Cold water
To Serve:
▢Boiled rice
▢5 soft boiled eggs
▢Fresh coriander
▢Chilli flakes
▢Warm pitta breads
INSTRUCTIONS
1. Add all of the meatball ingredients to a large bowl and mix together until just combined.
2. Form into walnut-sized balls (you should get 20-22).
3. Heat the oil in a large frying pan (skillet).
4. Place the meatballs in the pan and cook on a medium-high heat, turning regularly (turn carefully, using tongs to prevent the meatballs breaking) until browned all over - this should take about 6-8 minutes.
5. Remove the meatballs from the pan and place on a warm plate whilst we make the Chinese takeaway style curry sauce.
6. Add the turmeric, five-spice, curry powder and garlic to the pan with the meatballs, and cook for a further 2-3 minutes, until the spices start to release their fragrance.
7. Add the chicken and beef stocks and milk to the pan.
8. Stir everything together then add the meatballs back into the pan.
9. Bring to the boil, then turn down the heat and simmer for 10 minutes, turning the meatballs occasionally.
10. Add the chunks of onion and red pepper, simmer for a further 5 minutes (you want them to be warmed through, but to still retain their crunch).
11. Stir through half the sugar and half the lime juice, then taste and add more if needed.
12. Stir in the cornflour slurry (1 tbsp of cornflour/cornstarch + 2 tbsp of water). Taste and add additional lime juice or sugar to your taste.
13. Serve the curry with boiled rice (or cauliflower/broccoli rice*) and hard or soft boiled eggs**. Top with fresh coriander and chilli flakes. You could also serve with warm pitta bread if you like.

Kerala Meatball Curry / Ball Curry / Meat Kofta Curry
This video shows how to make meatball curry in easy steps
INGREDIENTS

Meat mince / kheema - 1/2 kg
Onion, chopped - 1 medium
Green chillies -
Ginger garlic paste -
Coriander leaves

Thick coconut milk - 3/4 cup
Thin coconut milk - 2 cups

KOFTA CURRY RECIPE | MEATBALL CURRY
RECIPE: Hi Guys, today I’ll show you How to Make KOFTA CURRY or MEATBALLS in GRAVY. Kofta can be made from vegetables, cheese or meat. In this video, I’ll be using ground meat - you can use ground lamb, beef, pork, chicken or turkey. For the meatballs, we’ll need grated garlic, grated ginger and finely chopped green chiles. Grated onion, I peeled an onion, kept it whole and grated it on the large holes of a box grater. Finely chopped cilantro and mint leaves. For the spices, garam masala, ground coriander and ground cumin.
For the gravy, cumin seeds and fennel seeds, ground coriander, chili powder, ground turmeric and garam masala. Chopped red onion, chopped garlic and ginger, green chiles slit in half and tomato sauce. Heat up a pan and add oil. When the oil is hot, add the cumin and fennel seeds. They’ll sizzle and turn color, you’ll smell them and know they’re done. Add the chopped red onion, cook for a minute, then add the chopped garlic ginger and slit green chiles, a little salt. Saute´ until golden brown. While that’s cooking, make the meatballs.
To the ground meat, add the ground cumin, coriander and garam masala, salt, grated onion, grated garlic ginger and finely chopped green chiles, mint and coriander leaves. Mix it up with a fork. Stir the onions in between. Mix the meat up well with your hands. Form into balls, I made about 18 large balls, you can make them smaller if you prefer. Set the balls aside while we finish the sauce. I try to save time in the kitchen so I’m doing both parts at the same time but you can definitely finish the sauce first and then make the balls if that’s easier.
The onions are golden brown, now add the ground coriander, turmeric, red chili powder and garam masala. Pour in the tomato sauce. Cook for about 5 to 7 minutes until the oil has separated and the mixture becomes thick. Remove it from the pan and let it cool a little. This is the thick paste that is going to make a rich, creamy gravy without adding any cream. Put this into a blender once it’s cooled for a few minutes. Add a little water and blend until smooth. Pour back into the pan. Add water to the blender to get out all that good stuff. Pour that into the pan and mix to combine. Bring this up to a boil, add salt, this is kasoori methi or dried fenugreek leaves, if you can get it add some, otherwise you can leave it out. Then add a little sugar or ketchup. You need a tiny bit of sweetness to balance out all the other flavors. Ketchup is a magic ingredient, it’s sweet and a thickener, just a little goes a long way.
Put the meatballs in the sauce, cover and bring to a boil, turn down the heat to medium low and cook for about 25 minutes. I’ll turn the meatballs halfway through cooking. I’ll taste one to make sure it’s done. The meatball is cooked, it’s soft and so flavorful from the grated onion, spices and herbs. It tastes really fresh. The sauce is perfectly seasoned and I could just drink it, it’s that good.
Serve this kofta curry with naan, chapathi or over rice. By the way, this recipe makes a lot of meatballs and gravy so you’ll have leftovers which is great because the curry tastes even better the next day.
