How To make Curried Chicken and Bow Tie Pasta Salad
3 lb Chicken
1 x
poaching ingredients:
6 ea *peppercorns
1 ea *bay leaf
1 ea *parsley stalk
1 ea *sprig of fresh thyme
1 ea *onion
1 ea *carrot
1 ea *celery stalk
1/2 x Green pepper, finely shred
1/2 x Red pepper, finely shred
1/2 x Yellow pepper, finely shred
8 oz Bow tie pasta, cooked
1 ea Salt
1 ea Pepper
1 x curry flavouring:
1/2 x *small onion finely diced
2 t *vegetable oil
1 T *curry powder
1/2 c *white wine
2 T *water
1 x curry mayonnaise:
1 1/2 c Mayonnaise
2 T Warm water
3 T Curry flavoring (above)
1 ea Pepper
1 ea Salt
Poach chicken by placing in a large pot with enough cold water to barely cover. Add peppercorns, bay leaf, parsley, thyme and one each: onion, carrot and celery cut into quarters. Bring to a bare boil with lid on; reduce heat to low and simmer for 50 minutes. Cool in poaching liquid, then drain, skin and shred. To make curry flavouring, soften diced onion in hot oil, then add curry powder and cook over medium-high heat for a further 3 minutes. Add wine and water. Boil rapidly until reduced to about 3 tablespoons. Strain and let cool. Prepare curry mayonnaise by combining all ingredients until smooth. Place peppers in a large bowl (reserving a little for garnish), with chicken, pasta, salt, pepper and curry mayonnaise. Mix gently until well- coated. If mayonnaise mixture is too thick, add warm water gradually until a smooth consistency is attained. Place a portion of salad on bed of spinach and sprinkle reserved peppers on top. Assemble just before serving, as the mayonnaise quickly loses its fresh look.

1 pound Rotini pasta, multicolored
3 cups cherry tomatoes,halfed
1/4 cup red onion, diced
1/2 cup broccoli, sliced
1/2 cup cucumbers, diced
1/2 cup kalamata(black)olives,sliced
1/4 cup carrot,sliced
1 green bell pepper, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 bottle of Wishbone Italian Dressing
1 teaspoon salt
1/2 teaspoon pepper
2-3 pinches red pepper flakes (optional)
Boil the pasta according to the directions on the package. Allow to pasta to cool.(You can run cold water over pasta to help it cool faster.)
In a bowl, add and mix all the ingredients together. Refrigerate before serving. *In my opinion it taste the best the next day bc everything has marinated over night*

Roasted Chicken and Bow Tie Pasta Salad Recipe

Fresh produce and tangy vinaigrette make this pasta salad a crowd-pleaser. Serve it for dinner tonight, and then pack the leftovers for lunch tomorrow. Use rotisserie chicken from the deli to cut preparation time on this no-cook chicken pasta salad recipe. Make this the night before for a portable lunch.
Yield: 6 servings (serving size: about 1 2/3 cups)
Preparation
Cook pasta according to package directions, omitting salt and fat; drain. Cool completely.
Combine orange juice and the next 7 ingredients (orange juice through rice vinegar) in a large bowl, stirring with a whisk to combine. Add pasta, chicken, grapes, celery, red onion, walnuts, chives, and parsley; toss gently to combine.

This BLT Caesar Pasta Salad is a recreation of a delicious salad I had on vacation! I can't seem to get enough of it and best of all, it comes together crazy quick with simple ingredients. The pasta salad I had originally had tiny seasoned bread crumbs in it. I left those out because I didn't have any on hand but it's still really good without it.
Great for cookouts or whenever you just need a simple side dish!
