How To make Curried Lamb Chops (Sfc)
8 Lamb chops, preferably from
-the rack, about 2 lbs Salt and freshly ground -pepper to taste 1 tb Curry powder
1 tb Peanut oil
1 tb Butter
2 tb Finely chopped shallots
1/3 c Dry white wine
1/2 c Fresh or canned chicken
-broth 1 ts Tomato paste
1 tb Finely chopped parsley
Lamb is one of the greatly under-utilized meats here in the US, I think. There are a variety of recipes from around the world to inspire you. Actually, I was looking for my Mongolian lamb recipe but don't have it typed in (just use any ol' Mongolian beef recipe and substitute lamb for the beef and don't over cook it). Sprinkle the chops on both sides with salt and pepper. Rub them on both sides with curry powder to coat evenly. Heat oil in a skillet large enough to hold the chops in one layer. Add the chops and cook until browned on one side, about 2 minutes. Turn and brown on second side, about 2 minutes. Turn onto the fatty rims and continue cooking until the rims are rendered of fat, about 2 minutes. Turn the chops flat side down and cook, turning them occasionally. The total cooking time should be about 15 minutes. Transfer the chops to a dish and pour off all the fat from the skillet. Add 1 tablespoon of the butter to the skillet and heat. Add the shallots and cook, stirring, about 15 seconds. Add the wine and bring to a boil. Cook for about 1 minute and then add the chicken broth and tomato paste. Cook over moderately high heat until reduced to about 1/3 cup. Swirl in the remaining butter and pour the sauce over the chops. Serve sprinkled with parsley. Serves 4. The earliest archaeological evidence from old sites and ruins of the fort indicate the existence of Raipur since the 9th century. However, there is enough literary evidence that defines the history of Raipur since the time of the Maurya Empire. Raipur district was once part of Southern Kosal and considered to be under the Maurya Empire. Raipur had later been the capital of the Haihaya Kings, controlling the traditional forts of Chhattisgarh for a long time. Satawahana Kings ruled this part till the 2nd-3rd century CE. Samudragupta had conquered this region in the fourth century, but the region came under the sway of Sarabhpuri Kings and then Nala Kings in the 5th and 6th centuries. Later on, Somavanshi kings had taken control over this region and ruled with Sirpur as their capital city. The Kalchuri Kings of Tumman ruled this part for a long time making Ratanpur as capital. It is believed that the King Ramachandra of this dynasty established the city of Raipur and subsequently made it the capital of his kingdom.
Another story about Raipur is that King Ramachandra's son Brahmdeo Rai had established Raipur. His capital was Khalwatika (now Khallari). The newly constructed city was named after Brahmdeo Rai as 'Raipur'. It was during his time in 1402 CE. that the temple of Hatkeshwar Mahadev was constructed on the banks of the river Kharun which still remains one of the oldest landmarks in Raipur. After the death of king Amarsingh Deo, this region had become the domain of Bhonsle Kings of Nagpur. With the death of Raghuji the III, the territory was assumed by the British government from Bhonsle's and Chhattisgarh was declared a separate Commission with its headquarters at Raipur in 1854. After independence, the Raipur district was included in the Central Provinces and Berar. Raipur district became a part of Madhya Pradesh on 1 November 1956 and subsequently became a part of Chhattisgarh on 1 November 2000 with Raipur becoming the capital of the new state.
Now, food—or the absence of it, during famines—can make or break empires. The first Mauryan king, Chandragupta Maurya, apparently abdicated his throne following a food shortage. And nearly half the provisions in his royal household were set aside for subjects, in case the crop failed. So, perhaps in this instance, Chandragupta’s chief minister Kautilya was merely being Kautilya, using a recipe to break down, to the last gram, the management of supplies in the imperial granaries and kitchens. Like an able housekeeper running a tight ship. Or the lady of a large house, keys jangling at the end of her sari pallu. So powerful is that last image, in fact, that I’ve caught myself wondering if Kautilya—spoken of as one man for the sake of convenience—may well have been a woman. But that’s fantastic fodder for another time.
This is a very simple recipe he promoted often which was almost like a one pot chicken - so you can cook this during your idle time or even when you are busy
To serve 4
Ingredients :
Chicken 750 gms
Potato 4 cut into halves
2 Onions sliced
2-3 tomatoes chopped
salt to taste
2 tbsp mustard oil
1 tbsp kashmiri red chilly powder
1 tbsp red chilly powder
1 tbsp coriander powder
1 tsp cumin powder
1 tbsp tandoori powder
1 tbsp chicken masala powder
4-5 tbsp cocont powder
chopped cilantro
2-3 cinnamon sticks
1 tbsp cumin seeds
2-3 dry redchillies ( optional )
2 tbsp ginger and garlic paste
200 ml yoghurt or Curd ( Please do not use very sour curd )
