Easy Leek and Potato Soup.
This is the easiest and most delicious soup recipe from the Slimming World soup book. It us syn free and really tasty.
Ingredients:
4 large leeks, chopped
1 large onion, diced
2 large potatoes, peeled and diced
1 litre vegetable stock
1 Tsp. garlic powder
Salt
Pepper
Freshly chopped parsley, to serve
Method:
Place all of the ingredients (except the parsley) into a large pan
Bring to a boil, cover and reduce to a simmer for 20 minutes.
Blend until smooth with a stick blender or liquidiser.
Serve with a little fresh parsley garnish.

4 cups vegetable broth
3 sprigs thyme
1 bay leaf
1 teaspoon salt
¼ teaspoon black pepper
⅛ teaspoon nutmeg
1 cup full-fat Greek yogurt or dairy-free yogurt
1 tablespoon chives finely chopped
