How To make Daiquiri Cheesecake
CRUST:
1 1/2 pk Graham crackers, crushed
6 Butter, melted
1/3 c Sugar
FILLING:
24 oz Cream cheese, softened
5 Jumbo eggs, separated
2/3 c Sugar
2 Env. knox gelatin
1/2 c Light rum
2/3 c Fresh lime juice
1 1/2 ts Fresh grated lime peel
1 1/2 ts Fresh grated lemon peel
1 pt Whipping cream
1/2 c Powdered sugar
Mix crust ingredients and pat into bottom of springform pan. Bake at 350~F for 10 minutes. Soften gelatin in small saucepan with 3/4 cup
water. Stir egg yolks into sugar. Add to gelatin mixture with lime juice, rum and rinds and cook over med. heat. stirring constantly until mixture thickens and bubbles. Cool. Beat cheese in large bowl until light and fluffy. Slowly add gelatin mixture and blend well. Beat egg whites until soft peaks form. Add powdered sugar and continue beating until stiff peaks form. Fold into cheese mixture. Whip cream and fold into cheese mixture. Pour into crust and refrigerated several hours or overnight.

And so it comes to the end of another year. It is time to reflect and drown your sorrows OR celebrate and welcome the New Year with a BIG slice of NYE Strawberry Daiquiri Tart! Or have two BIG slices and do both…
This tart has a delicious Butternut Snap base, a creamy strawberry filling with a little bit of a zing from the rum and lime juice. Topped with mint sugar, it really is a strawberry daiquiri in a tart.

NOTE: Skip the rum if this tart is for the little ones.

Ingredients:
- 250g butternut snap biscuits, crushed
- 100g butter, melted
- 1 tbs. boiling water
- 2 tsp. gelatine powder
- 1 ½ cups thickened cream
- ½ cup castor sugar
- 250g strawberries
- ¼ cup white rum
- 2 tbs. lime juice
To serve
- 250g strawberries
- 2 tbs. white sugar
- 1 tbs. fresh mint, finely chopped

INGREDIENTS
1 box duncan hines strawberry cake mix
1/4 cup strawberry malibu rum
3/4 cup frozen strawberry daiquiri mix
3 eggs
1/3 cup oil
tub of vanilla frosting
fresh strawberries (optional)
whipped cream (optional)
DIRECTIONS
Spray inside of slow cooker with pam. Mix all ingredients and pour into slow cooker. Cook on low 2-2 1/2 hours. Let cake cool. Add 2 tbsp frozen strawberry daiquiri mix to the tub of frosting. Frost cake with icing and add fresh strawberries and whipped cream (optional)
