Pizza dough
Recipe in English:
Ingredients:
-Flour 2cups
-Instant yeast 1 & ½ tsp
-Sugar 1 & ½ tsp
-Salt 1 tsp
-Milk ¼ cup (warm)
-Oil 4 tbs
-Water 5-6 tbs (warm)
-Oil and water as required for kneading process
Directions:
-In bowl add flour,instant yeast,sugar and salt,mix it.
-Make a well,add milk (warm) and oil,mix well.
-Add warm water and mix until all ingredients are combined.
-Grease working table with some oil and water and knead dough well until soft and smooth.
-Grease and leave dough for 1 hour in a warm place.
-Grease pizza tray with oil,spread the dough with the help of your fingertips.
-Make pizza of your choice.

Ajza:
-Maida 2cups
-Khameer 1 & ½ tsp
-Cheeni 1 & ½ tsp
-Namak 1 tsp
-Doodh ¼ cup
-Tel 4 tbs
-Paani 5-6 tbs (neem garam)
-Tel aur pani hasbe zaroorat for kneading process
Directions:
-Sab sa pehlay maida mein khameer,cheeni aur namak shamil ker k mix ker lein.
-Garha bana ker is mein neem garam doodh aur tel dal ker k ache tarhan mix ker lein.
-Neem garam paani shamil ker k maida haathon sa ache tarhan goondh lein.
-Jab sab mil kar ek ball ki tarah ban jaye to hatheli se naram goondh lein.
-Working table per tel aur pani halka sa laga lein aur maida ko goondh lein.
-Maida per halka sa tel laga ker 1 hour ke liye garam jaga pe rakh dein.
-Pizza tray ko grease ker k maida ki dough ko haathon ki madad sa phela lein.
-Apni marzi ka pizza bana lein.

To make cheese sauce
Ingredients:
Processed cheese 1 cup (200gm)
Milk 100 ml
Butter 1 tbsp
Methods:
Set a small pan or pot filled with water for boiling and place a bowl over it, make sure the water does not touches the base of the bowl, this process is of cooking is called double boiler method, add the grated cheese, milk and butter in the bowl, mix and whisk until the cheese melts,
Further blend it with a blender for smooth consistency, your instant cheese sauce is ready, use accordingly. You can store them in a well sterilized container and keep them refrigerated.
For making pizza dough balls
Ingredients:
Warm water 1/4th cup
Sugar 1 tbsp
Yeast 1.5 tsp
Refined flour 2 cups
Milk powder 1 tbsp
Salt ½ tsp
Warm water 1 cup
Olive oil 1 tbsp
Methods:
Pour warm water in bowl, add sugar and yeast, mix well and let the yeast froth up.
In a mixing bowl, add refined flour, milk powder and salt, mix well and add warm water slowly and gradually, and the yeast mixture, mix well and knead into a soft dough, further add olive oil and knead until soft and smooth, you can also use electric blender for a minute for better results.
Apply a little more olive oil on the dough surface to prevent it from drying, cover it with a cloth and rest for 1.5 hours in a warm place for the dough to proof.
After proofing, puncture the air in the dough by kneading once again and smoothen the dough, divide into four equal parts, and tuck inwards to smoothen the dough surface and apply oil once again to prevent it from drying, rest them as well for 15-20 minutes. Keep aside, to be used later for making freshly baked pizza.
Assembly
Ingredients:
Pizza dough balls
Maize flour as required for dusting
Cheese sauce as required
Readymade tortilla or homemade chapati 4 pcs, each for one pizza
Pizza sauce as required
Mozzarella cheese as required
Toppings:
Capsicum
Onions
Tomatoes
Sweet corn
Paneer tandoori
Oregano and chilli flakes as per taste
Methods:
Sprinkle some maize flour and flatten the dough balls with hands into a flat pizza bread.
By the time you make the pizza, Preheat the oven at 250℃
Use a plate and sprinkle some maize flour and place the pizza bread over it, shape the sides as shown in the video, further spread the cheese sauce, place a ready-made tortilla or homemade chapati, further apply pizza sauce, sprinkle enough amount of mozzarella cheese and place the toppings, you can use toppings as per your preference.
Slide in your pizza over the hot baking tray and bake it at 250℃ or 10-15 minutes.
Your freshly baked cheese burst pizza is ready to be served, sprinkle some oregano and chilli flakes to enhance the taste and slice into as many slices you would like to share with your mates. Make sure it’s hot and don’t end up burning your precious palate.

Afghani Tikka Burst pizza
Recipe in English:
Ingredients:
Prepare Dough:
-Warm water ¾ Cup
-Bareek cheeni (Caster sugar) 1 tbs
-Khameer (Instant yeast) 2 & ½ tsp
-Maida (All-purpose flour) sifted 3 & ½ Cups
-Namak (Salt) 1 & ½ tsp or to taste
-Cooking oil 2 tbs
-Dried oregano 1 tsp
-Olper’s milk warm ¾ Cup or as required
-Cooking oil 1 tsp
Prepare Afghani Tikka Boti:
-Olper’s Cream ½ Cup
-Hari mirch (Green chilli) crushed 1 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Dahi (Yogurt) 2-3 tbs
-Lemon juice 1 tbs
-Namak (Salt) 1 tsp or to taste
-Kali mirch (Black pepper) crushed 1 tsp
-Safed mirch powder (White pepper powder) ½ tsp
-Elaichi powder (Cardamom powder) ½ tsp
-Zeera powder (Cumin powder) 1 tsp
-Chicken boneless small cubes 400g
-Cooking oil 2 tbs
-Koyla (Charcoal) for smoke
Prepare Creamy Sauce:
-Olper’s cream 200ml
-Olper’s cheddar cheese grated ½ Cup
-Dried oregano ½ tbs
-Lehsan (Garlic) cloves 3
-Namak (Salt) ½ tsp or to taste
-Dried parsley ½ tbs
-Lemon juice 2 tbs
-Sugar powdered ½ tsp
-Mayonnaise ¾ Cup
Assembling:
-Mozzarella cheese grated
-Pizza sauce
-Shimla mirch (Capsicum) julienne
-Pyaz (Onion) sliced
-Black olives sliced
-Olper’s cheddar cheese grated
-Olper’s mozzarella cheese grated
-Pickled jalapenos sliced
-Dried oregano
Directions:
Prepare Pizza Dough:
-In a small jug,add warm water,sugar,instant yeast & mix well,cover & let it rest for 5 minutes & set aside.
-In a bowl,add all-purpose flour,salt,cooking oil & mix well until it crumbles.
-Add dried oregano & mix well.
-Add yeast mixture & mix well.
-Gradually add warm milk & knead until dough is formed,grease with cooking oil,cover & let it proof for 1 hour (warm place).
Prepare Afghani Tikka Boti:
-In a bowl,add cream,green chilli,ginger garlic paste,yogurt,lemon juice,salt,black pepper crushed, white pepper powder,cardamom powder,cumin powder & whisk well.
-Add chicken and mix well,cover & marinate for 15-20 minutes.
-In a frying pan,add cooking oil and marinated chicken,mix well & cook for 1-2 minutes,cover & cook on medium flame for 8-10 minutes then cook on high flame until dries up (approx. 4-5 minutes).
-Give a coal smoke for 1-2 minutes & set aside.
Prepare Creamy Sauce:
-In a blender jug,add cream,cheddar cheese,dried oregano,garlic,salt,dried parsley,lemon juice, sugar,mayonnaise,blend well & set aside.
-Knead dough again until smooth.
-Divide the dough into half,take one part and divide into two portions,one small dough is 150g and the other dough in 220g.
-Take a small dough (150g),sprinkle dry flour & roll out thin dough with the help of rolling pin (11-inch) and prick with fork.
-Heated griddle,place rolled dough and cook for 1 minute each side & set aside.
-Take another dough (220g),sprinkle dry flour & rolled out with the help of rolling pin (12-inch round),place on pizza rack and prick with fork.
Assembling:
-On rolled dough,add & spread creamy sauce (leaving the sides around 1-inch).
-Add mozzarella cheese,apply water on the edges,place prepared flat bread (11 inches),get the sides closer & seal tight.
-Add & spread pizza sauce,add afghani tikka boti,capsicum,onion,black olives,cheddar cheese, mozzarella cheese,pickled jalapenos & dried oregano.
-Bake in preheated oven at 200C for 10-12 minutes (on both grills) (makes 2 large pizza).
-Cut into slices & serve!

Pizza diameter will be 12 inches (30 cm)
Bake in preheated oven for 10 minutes at 200 °C (400 °F)
