How to Can Dilly Beans
If you love the flavor of dill, but don't always love the traditional cucumber pickle, then these dilly beans are the answer for you! They're a green bean that's canned in a vinegar and dill brine, making for a crisp that can be enjoyed later!

INGREDIENTS
For the jars:
- 3-4 lb fresh green beans cleaned and washed
- 1/2 medium onion cleaned and thinly sliced
- 3 tsp dill seeds separated
- 3 tsp crushed red pepper flakes (optional)
For the brine:
- 3 cups water
- 3 cup vinegar
- 1 tbsp salt
INSTRUCTIONS
- Prepare lids and rings, water bath, and brine. Bring water bath and brine to a boil as the jars and beans are prepared.
- Divide sliced onion in the bottom of each sterilized jar. This can be adjusted to personal preference. Take a bean and using the jar as a guide, trim the bean to within a half-inch of the top (leaving 1/2 inch for headspace). Trim all the beans using the guide bean for the length.
- Place beans in jars, standing them upright and packing them slightly until the beans are tight in the jars. Add dill seeds on top of the beans. Optional: If a spicy bean is desired, add crushed red pepper flakes to each jar.
- Once the water bath and brine are boiling, ladle brine on each jar, leaving 1/2 inch of headspace. Place prepared lids and rings on jars and place them in the water bath. Process for 12 minutes once the water starts to boil again.
- After processing, use a jar lifter and set jars out of the water. Let rest for 12-24 hours before removing the rings. These should sit at least two weeks before being enjoyed but will last up to a year in a cool, dark place.

Makes 3 Quarts
3½ cups vinegar
2 cups sugar
2 sticks cinnamon
1 tablespoon pickling spice
1/2 teaspoon canning salt
3½ cups water
Boil beans for 15 minutes, then let simmer. Stuff beans in steralized quart jars as tight as possible. Make liquid out of rest of ingredients by bringing to a boil until combined and sugar dissolved. Pour liquid over beans leaving 1/2-1-inch headspace. Wipe top of jars and hand-tighten lids. Hot bath for 15 minutes. Will be ready to eat right away. Refrigerate after opening.

I showed you how to make the best brine for refrigerator pickling anything! The pickles are amazing and so are the Dilly beans. We use our most recent harvest to stock upon a few must harvest!
Hot Sauce Change out Mango with 3 peaches
Dilly Beans
Recipe
Refrigerator Pickles
Brine (makes about 2 quarts)
3 tablespoons salt
3 tablespoons sugar
1 ¼ cup of Distilled Vinegar
2 cups of cool water
Pickling seasoning (per quart jar)
½ tablespoon of Peppercorns
½ tablespoon of Coriander
½ tablespoon of Mustard Seeds
2-3 sprigs of dill
2 (+) cloves of garlic
1 ½ - 2 hot peppers (Optional)
Pickling style cucumbers (4-6 inches in length)
Directions:
Add Salt, Sugar, and Distilled Vinegar to a non reactive pot and dissolve
Once Dissolved remove from heat and add cool water
Allow to cool completely (prepare ahead of time)
Cut cucumbers to desired size: chips, spears, quartered, halved or whole
Add seasoning, garlic, dill and Peppers (optional) to jar
Add cucumbers
Tightly packing into jar
Add cooled brine. Allow for approximately ½ inch of head space or ensure the cucumbers are completely covered.
Allow to pickle in the refrigerator for approximately 1 week
Eat within a month.

CANNING PICKLED GREEN BEANS | Trying a Dilly Bean Recipe
We’re canning pickled green beans with dill for the first time! This is a water bath method for canning green beans.
We are lucky to have had an abundance of green beans this year. Thanks to succession planting our bushing green beans, and the super prolific pole green bean plants we have been harvesting green beans every day! We love green beans so it works out.
Being that we like green beans so much, and we love pickles… we hope that this will be a recipe that we like!
