How To make Double Bran Citrus Muffins
1 1/2 c All-purpose flour with wheat
-bran (Five Roses) 1/2 c Oat bran
1/3 c Sugar
1 ts Baking powder
1 ts Baking soda
1/4 ts Salt
1 c Buttermilk
1/4 c Vegetable oil
1 Egg; lightly beaten
Grated rind of 1/2 orange Grated rind of 1/2 lemon 1/2 c Dates or prunes; chopped
1 tb Sesame seeds
In a large bowl, combine flour, oat bran, sugar, baking powder, baking soda and salt. In a separate bowl, beat buttermilk, oil, egg and citrus rinds. Add to dry ingredients, mixing until just dampened and still lumpy. Lightly stir in dates and spoon into lightly greased muffin cups. Sprinkle with sesame seeds. Bake at 375 F for 20 minutes.

MUFFINS TWO WAYS
Double Chocolate Muffins
¾ cup brown sugar
½ cup cocoa powder
1 ¾ cup all-purpose flour
2 tsp. baking powder
1 tsp. baking soda

1 whole egg
½ cup fresh milk
½ cup melted butter (salted)
2 cups chocolate chips, plus additional for topping
Chocolate Chip Muffins

400ºF 15-20 minutes baking time

If you think Bran Muffins are boring and tasteless - think again :) This recipe is wholesome, healthy, and a delicious way to add to your daily intake of fibre. Hope you give it a try - it's a classic
Wholesome Bran Muffins (Raisin/Walnut Bran Muffins)
Yield: Makes 12 delicious muffins
INGREDIENTS
• 1 CUP SKIM (0%) MILK (OR ANY OTHER MILK)
• JUICE FROM 1 LEMON (OR 2 -3 TBSP OF LEMON JUICE)
• 1 EGG, LIGHTLY BEATEN
• 1/3 CUP EVOO (EXTRA VIRGIN OLIVE OIL)
• 2/3 CUP BROWN SUGAR (1/2 CUP IF YOU PREFER LESS SUGAR)
• 1 TSP VANILLA (1/2 TSP MIN)
• 140 gm ALL PURPOSE WHITE FLOUR (i.e. 1 cup) (UNBLEACHED PREFERRED)
• 1 ½ CUPS OF WHEAT BRAN
• 1 TSP BAKING SODA
• 1 TSP BAKING POWDER
• ½ TSP SALT
• ½ CUP RAISINS (PREFERABLY, SOAKED IN WATER 5 MINS)
• ¼ CUP CHOPPED WALNUTS
DIRECTIONS & METHOD
• ADD LEMON JUICE TO MILK
• PUT WHEAT BRAN IN BOWL, AND ADD LEMON/MILK. MIX AND LET STAND 5 MINS
• ADD EGG, VANILLA, SUGAR, EVOO, AND MIX
• IN A SEPARATE BOWL, ADD FLOUR, SALT, BAKING SODA AND BAKING POWDER
• ADD FLOUR MIXTURE, TO THE BRAN MIXTURE AND MIX TILL ALL FLOUR IS ABSORBED
• FOLD IN RAISINS AND CHOPPED WALNUTS
• SPOON INTO MUFFIN CUPS, FILL TO THE TOP
• BAKE AT 375 DEGREES FOR 15 – 20 MINUTES (I BAKE 17 – 18 MINUTUES IN MY OVEN)
• REMOVE, LET COOL, THEN REMOVE FROM BAKING TRAY, ENJOY
