Cinnamon French Toast Roll-Up Bake
Two tasty treats: French toast and cinnamon buns all rolled into ONE! ????????
Serves 8 (2 roll-ups each)
INGREDIENTS
For the roll-up bake:
24 slices SASKO Premium White Bread
1 cup sugar
2 tbsp ground cinnamon
Butter, to spread
6 eggs
2 cups milk
For the glaze:
100g cream cheese, at room temperature
2 tbsp butter melted
1 tsp vanilla essence
2 Tbsp milk
1 cup icing sugar
Serving suggestion:
Fresh mixed summer berries
METHOD
1. Preheat oven to 160°C and grease and line a baking dish with baking paper.
For the roll-up bake:
1. Remove the crusts from the slices of bread. *Chef’s tip: Place crusts in a re-sealable bag and freeze to use for croutons or breadcrumbs later.
2. Arrange 3 bread slices in a vertical row with the ends overlapping slightly. Join the ends together by pressing down. Repeat with the rest of the slices, forming 8 vertical bread strips.
3. Combine the cinnamon and sugar.
4. Spread butter generously over one side of the 8 strips and sprinkle a generous amount of cinnamon-sugar over each.
5. Starting at the end, roll up each strip (rolling in the butter and cinnamon sugar) to form 8 rolls. Cut the rolls in half and place half-rolls next to each other in the baking dish so that they fit snuggly together.
6. Using a fork, beat together milk and egg.
7. Pour the egg mixture over the roll-ups and cover the dish with tinfoil. Leave to stand for 10-15 minutes so that the bread absorbs the custard.
8. Bake in the oven, covered, for 30 minutes before removing foil and continue to bake uncovered for a further 10-15 minutes, until the top is lightly browned.
For the glaze:
1. Beat together all ingredients (except the icing sugar) until smooth and creamy.
2. Add the icing sugar and continue to beat mixture until it is lump-free. *Chef’s Tip: Add more milk if necessary to get desired consistency.
For serving:
1. Remove the bake from the oven and allow to sit and cool for 5 minutes before drizzling the glaze over the warm rolls.
2. Serve with fresh berries and ENJOY!

4 slices of thick bread, I use Texas Toast style
3 large eggs
2 to 3 tbsp milk (whole, 2%, almond, etc.) (30 to 45ml)
1/2 tsp vanilla extract (optional) (2ml)
1 to 2 tsp of ground cinnamon (2 to 4g)
1/2 cup of sugar (100g) doesn't have to be exact.
1 tbsp of butter or oil (14g)
Dips - maple syrup, strawberry sauce/syrup, chocolate sauce/syrup

This recipe is based on inspiration from the Pioneer Woman & Martin’s Famous Pastry shop:
(Adjust accordingly to make more or less toast)
Ingredients:
4 pieces of bread
1/2 stick of butter
1/4 cup white sugar
1 tsp cinnamon (use more if you love it!)
1 tsp vanilla extract (use less if you don't love it!)
Instructions:
Preheat oven to 350 degrees. Combine softened butter with sugar, cinnamon, and vanilla. Spread evenly onto the bread, going all the way to the edges of the crust. Place bread on baking sheet and cook for 6-8 minutes (I felt like I went a little too long in this video). Then switch to broil for 1 minute and crisp up the top of the bread. Serve with protein and enjoy!

This Cinnamon Roll French Toast Casserole is perfect if you are hosting loved ones this time of year (or anytime the the year) and feel a bit stuck because you don't know what to sever them for breakfast. I know I get nervous thinking what can I make that taste great and comes together fast and isn't much hassle (just so I can get as much time with my loved ones without having to spend hours in the kitchen). This casserole is perfect for hosting or a late brunch or anytime you want something delicious.

9x13 Baking Dish:
Coconut Oil Cooking Spray:
Cinnamon Roll French Toast Casserole
2 cans Cinnamon rolls (store bought)
1/2 cup butter
1/3 cup sugar
2 eggs
3/4 cup heavy whipping cream
3 teaspoon cinnamon
1/4 teaspoon nutmeg
2 teaspoon vanilla extract
1/2 cup chopped pecans
Icing from cinnamon roll packages
Preheat over 350 degrees F. Grease a 9x13 casserole dish. In a saucepan, melt butter with sugar, once melted add the butter and sugar mixture to a large bowl. Add in eggs, cream, cinnamon, nutmeg and vanilla to the large bowl and beat until everything is combined. Open canned cinnamon rolls and slice each cinnamon roll into fourths. Place cinnamon roll pieces into the bowl of egg mixture and toss to thoroughly coat. Then pour the mixture into a greased casserole dish and spread out evenly. Sprinkle with pecans and then bake for 35-40 minutes (rotate halfway thought baking). Remove casserole from oven. Drizzle icing from the cinnamon rolls evenly on top casserole. Enjoy!
