There is nothing so tasty in the Fall in Winter as a big ol' steaming bowl of Chili, and this recipe for Chili From Scratch using ground Turkey uncovers the secrets of making a healthy and absolutely delicious lean meat Chili!

Ingredients
2 lbs. Ground Turkey
1 Sweet Onion, roughly chopped
½ Each Red, Green, Yellow Bell Peppers, ¼” dice
1 Jalapeno Pepper, seeds removed, finely minced (Optional, depending on heat. level desired)
2 Garlic Cloves, finely minced
2 Tbs Tomato Paste Concentrate
1 Bottle Lager Beer
1 28 oz. Can Crushed or Whole Peeled Tomatoes, with sauce
1 Tbs Dried Oregano
2 Tbs Chili Powder
2 Tbs Smoked Paprika
2 Tbs Ground Cumin
1 Tbs Turmeric
1 tsp Berbere (hot, earthy Ethiopan spice mix, use sparingly)
Coarse Kosher Salt
Black Pepper, freshly coarse ground
Grapeseed Oil, or other neutral vegetable oil

How to Make the Best Chunky Chili | I Heart Recipes w/ Rosie Mayes
Hey friends! I want to show you How to Make the Best Chunky Chili:
For this recipe I use basic ingredients such as ground beef, onions, and bell peppers. I also just use store bought mild chili seasoning, mixed with seasoning salt, and black pepper to spice things up. Once the chili is done I like to top it off with some of my favorites such as sour cream, cheese, lime wedges, and spicy peppers. This hearty chili recipe is made with fresh, minimal ingredients for a satisfying and EASY dinner!

0:49 - Chop a yellow onion.
0:51 - Chop a red bell pepper.
1:17 - Chop a green bell pepper.
1:37 - Add the ground beef to a pot.
1:42 - Turn the heat to medium high.
1:52 - Brown the meat.
2:45 - Once browned, drain the fat.
2:57 - Add the peppers and onions.
3:15 - Stir until well combined.
3:22 - Cook until the peppers and onions are translucent.
3:48 - Add minced garlic.
3:55 - Add diced tomatoes.
4:15 - Stir the ingredients together.
4:30 - Add tomato paste.
4:43 - Pour in beef broth.
4:57 - Add the beans.
5:12 - Sprinkle in chili seasoning.
5:31 - Sprinkle in seasoning salt.
5:49 - Sprinkle in black pepper.
6:10 - Give everything a nice stir.
6:30 - Reduce the heat to low.
6:35 - Cook for 30 minutes.
7:10 - Dish into a bowl.
7:24 - Add a dollop of sour cream.
7:40 - Sprinkle on cheese.
7:51 - Sprinkle on diced purple onion.
7:58 - Add a lime wedge.
8:05 - Add sliced jalapenos.
8:12 - Top off with red pepper flakes.

The Best Home Style Chili Recipe with Three Beans & Bacon!
Chili is a great fall, winter dish.. no, take that back. Chili is good all the time! If you follow this guide on how to really improve your chili game you won't be disappointed. Regardless of what you put in your chili, the key to great chili is to layer your spices and flavors, letting them develop and mature. The less you rush, the better the chili, I promise!
**disclaimer** This is NOT the exact same award winning chili recipe that we cook at the Santa Cruz chili cook off, that one will remain a secret for now*** This is my adaptation to that recipe. As not to give that one away completely. Sorry.
I'll make this recipe in way you can change it per pound of meat you add. The rest of what you add, is really up to you.
*If you can’t eat bacon that’s ok, just use a couple tbsp of olive oil to sauté the onions.*
Here's what I used:
Im using a 12 quart Stainless Steel double boiler pot, which as you can see in the video only came up 3/4 of the way. So you could get away with a 6-8quart pot or dutch oven.
1lb stew meat, cut into 1/4 bite size piece, remove fat and senew
2lb 90/10 Hamburger
Now here are the variables, just double/triple it depending on how much protein you use:
1 Yellow onion per 1.5 pounds of meat
2 cloves of garlic per pound of meat
3 strips of thick cut bacon, cut into small pieces per 1.5 pounds of meat
1/2 Tablespoon of Worcestershire sauce per 1.5 pounds of meat.
1 cup Stock per pound of meat. Use chicken or beef or both like I do.
1 14oz can of Fire Roasted tomatoes per 1.5 pounds of meat.
3oz of Tomato Paste per 1.5 pounds of meat.
1 can of beans per pound of meat. I went with three because it all works. Just don't use white beans as they tend to fall apart.
For the Spices, you'll divide these into 2 separate amounts to be added as specific points of the recipe to layer the flavors. Just follow the guide below on how much spice per pound of meat, then take that amount and put it into two bowls to be added at different times.
2 Tbsp Chili powder per 1.5 pounds of meat, in two amounts
1 Tbsp Ancho Chili Powder per 1.5 pounds of meat, in two amounts
1.5 Tsp Chipotle Powder per 1.5 pounds of meat, in two amounts*
1.5 Tsp Cumin Powder per 1.5 pounds of meat, in two amounts
1 Tsp Onion Powder per 1.5 pounds of meat, in two amounts
1 Tsp Kosher Salt per 1.5 pounds of meat, in two amounts
1/2 Tsp Black pepper per 1.5 pounds of meat, in two amounts
1 Tsp Smoked Paprika per 1.5 pounds of meat, in two amounts
* If you don't tolerate heat well, then cut the chipotle powder down to 1/2 to 1 Tsp per 1.5 pounds of meat, in two amounts instead*
the bullion base I use
Ancho chili powder
Smoked Paprika
Optional: IF you like your chili really thick, then add in Masa near the end. Masa has great flavors.
1Tbsp Masa/3 Tbsp water
Only add in 1 Tbsp at a time until you reach the desired thickness.
Directions:
1. Dice your onions, Chop up the bacon, stew meat and mince your garlic.
2. Brown the bacon on medium-high heat until browned, remove from the pot and set aside.
3. Saute the Onions in the bacon grease (and other veg if you add) until the onions are translucent, about 3-4 minutes. Then Add in the garlic and keep stirring for another minute until the garlic is soft and fragrant.
4. Add in your meat proteins and brown. Once brown, add in the first set of spices. Let it cook for an additional 3-4 minutes to let the spices bloom.
5. Add in your Bacon, Tomato paste, Fire Roasted Tomatoes, Beans, Worcestershire sauce and stock. Cover and simmer for 40 minutes. After 40 minutes is up, add in your second batch of spices. Leave uncovered and simmer an additional 20 minute, add in the Masa if you desire, stir until thicken and then serve.
Garnish with your favorites; Cheese, onions, cilantro, Frito chips, Limes, hot sauce or what ever you like. You can just eat it straight up, because it's that good!
