How To make Duchess Potato Puff
2 1/4 c Water
3 tb Margarine or Butter
1/2 ts Salt
1/2 c Milk
2 1/2 c Mashed Potatoe Flakes
Egg 1/2 c Dairy Sour Cream
2 oz Shredded Cheddar Cheese*
*INGREDIENT LIST SHOULD READ: 2 oz. (1/2 cup) shredded cheddar cheese. Heat oven to 350 degrees F. Lightly butter 1 1/2-quart casserole. In medium saucepan, heat water, margarine and salt to rolling boil. Remove from heat. Stir in milk and potato flakes. Blend in egg, sour cream and cheese, mixing thoroughly. Scoop or spoon into prepared casserole. Bake at 350 degrees F. for 20-30 minutes, until lightly golden brown and puffed. Refrigerate leftovers. I have not tried this recipe yet. It comes from my "PIllsbury Festive Holiday Recipes" cookbook, Classic No. 13.

How to make pommes dauphine: (French potato puffs recipe)
The Pommes dauphine is a very old side dish ( 1900's) made out of a blend of potato mash and choux pastry that is then deep fried to transform into fluffy and crunchy potato puffs. Get the recipe:
Three important points to remember to make sure you get your Pomme Dauphine right:
1- Temperature control if key! from what I tested, an oil temperature of 160 degrees Celcius /320 F should be kept steady at all time.
2- Size matter. do not be tempted to deep fry large amount of dauphine potato dough at any one time as it won't have time to cook fully and will just be uncooked inside and will become overcooked on the outside.
the right size to use is about the size of a wine bottle cork. or the size of a large walnut if using a spoon.
when you start making Dauphine potatoes if may be better to use a pipping bag to be able to easily control how much dough you are putting in the oil.
3- Patience is key. deep frying choux pastry based product always take time to be fully cooked. The average time it takes to cook is about 6 to 7 minutes per Dauphine potato. To make sure it is cooked, you need to wait for the Potato puff to be just about to crack open ( as shown in the video) this is the sign that the potato puff is ready.

Potato fondant or also known in French as Pommes De Terre Fondantes is a technique used by cutting potatoes into cylinder sahpes and browning the ends while slowly braising and roasting in stock and butter. There's probably not a better potato as they become creamy inside and buttery roasted on the top. Great served with meats or most dishes as a side potato dish.

EGGLESS DUCHESS POTATOES / DUCHESS POTATOES RECIPE

INGREDIENTS
3 medium sized potatoes [ 500 grms ] peeled and chopped
2 tbsp butter
¼ tsp salt
Piping Tip and Bag
Potato Masher
Vegetable Peeler

METHOD
Peel and chop the potatoes .
Boil the potatoes for 18 to 20 minutes in water in a medium pot, until soft and fork tender. Drain any excess water.
Add salt + butter to the pot and mash with a potato masher. You want to mash until the potatoes are very smooth and soft there should be no clumps.
Sieve it through a strainer to get smooth creamy mixture .
Preheat oven to 170 °C .
Add the potatoes to a prepared piping bag. Pipe them onto a lined baking sheet.
To pipe them start by making a small circle on the bottom and piping upwards to complete the top.
Bake in oven at 170 °C for 40 mins or until crispy.
When done they should be golden and the bottom is golden as well. They will be crispy on outside and soft on inside. If desired garnish with fresh parsley or fresh oregano.
Serve with tomato ketchup or any dips .
