Vegan Hot Oatmeal Drink (Atole de Avena)
This is a mexican oatmeal drink we call Atole which means thick hot drink, and we drink this in the morning or evening. It is great for those cold winter nights.....You can have this by itself or with some toast, bread, cookies or even with breakfast or dinner instead of coffee or tea :) Enjoy!!!

1/2 to 1 cup water (I would use only 1/2 cup water) 3 small pieces of mexican cinnamon stick 1/2 to 1 cup non-dairy milk of choice (I would use 1 cup milk) 2 Tb ground old fashioned oats (place the oats in coffee grinder and grind for 5 seconds) or whole oats sweetener of choice 1/4 tsp vanilla extract (this really makes it extra yummy) a dash of ground cinnamon on top of the finished product for extra flavor

Overnight Oats with Matcha Tea Latte featuring Eden Foods

Overnight Oats
Serves 2
2 cups unsweetened Edensoy 1 cup gluten-free rolled oats 2 tablespoons chia seeds 2 tablespoons maple syrup ¾ cup fresh or frozen berries, plus more for garnish
Combine the Edensoy, oats, chia seeds, and maple syrup in a mason jar or covered bowl. Stir well, cover, and refrigerate overnight (at least 6 hours).
Mash ¾ cup of fruit, place half in the bottom of a serving glass or jar, add half the oats, and swirl. Top with fresh berries.
