How To make Eggnog Pound Cake
1 c Butter or margarine; soft
1/2 c Shortning
3 c Sugar
6 Eggs
3 c Flour
1 c Egg nog
1 c Flaked coconut
1 ts Lemon extract
1 ts Vanilla
1/2 ts Coconut extract
Cream butter and shortning. Gradually add sugar, beating well at medium speed of an electric mixer. Add eggs, one at a time, beating well after each addition. Add flour to creamed mexture alternately with eggnog, beginning and ending with flour. Mix just until blended after each addition. Stir in coconut and flavorings. Pour batter into a greased and floured 10" tube pan and bake at 325~ for 1 hour and 30 minutes or until a wooden pick inserted in center of cake comes out clean. Cool in pan 10 minutes; remove from pan and cool completely on a wire rack.

Eggnog Poundcake | How to Make Poundcake from Scratch | Christmas Dessert Recipe
The recipe I made for day 8 of countdown to Christmas is the most perfect dessert for the season! This Eggnog Poundcake is rich and decadent and super tasty when you warm it up and eat it with a scoop of ice cream!
INGREDIENTS:
4 cups of AP flour
4 cups of sugar
4 sticks of butter
8 eggs
1 cup of eggnog (or 3/4 cups of eggnog + 1/4 cup of sour cream)
2 tsp of vanilla extract
WHITE CHOCOLATE GLAZE:
1 pkg of white chocolate chips
1 can of sweetened condensed milk
1/2 cup of heavy cream
1& 1/2 cups of powdered sugar
RECIPE NOTES:
- MAKE SURE THAT ALL YOUR COLD INGREDIENTS HAVE HAD A CHANCE TO COME TO ROOM TEMPERATURE! Room temperature ingredients combine easier and faster. Place cold ingredients on the counter to come to room temp. at least 2 hours before you’re ready to make your cake.
- Do NOT over mix batter when you begin adding in flour. Mix each addition of flour just until combined. Over-mixing causes your cake to be dry and dense.
- Bake in a 325 degree oven for 1 hr. 30min. Until toothpick comes out clean after inserted.
- This cake is also great without the glaze if you prefer plain poundcake!

This Eggnog Bundt Cake is fluffy and tastes just like everyone’s favorite holiday drink! Made with a cake mix, this cake can come together quickly for any Christmas gathering or dessert with your family.

Ingredients
1 Cake Mix, Yellow or Vanilla
2 Eggs, beaten
1/4 Cup Butter, melted
1 1/2 Cups Eggnog
1/8 Teaspoon Nutmeg
1/4 Teaspoon Rum Extract or Vanilla Extract
1/4 Cup Sugar (for dusting the pan)
Instructions
How to Make Eggnog Bundt Cake
Add the cake mix, eggs, melted butter, Eggnog, nutmeg, and rum extract to the bowl of a stand mixer.
Use the whisk attachment to mix the ingredients for 2-3 minutes until the batter is light and fluffy.
Prepare the bundt pan by spraying it with nonstick cooking spray, then sprinkle with sugar, completely coating the pan.
Pour the eggnog cake batter into the bundt pan and bake at 350 degrees for 35-40 minutes or until a toothpick inserted comes out clean.
Remove the cake from the oven and allow it to cool in the pan on a cooling rack for about 20 minutes.
Place a cooling rack over the pan and invert to remove the cake from the pan.
Allow the cake to completely cool, then serve.
