How To make Eggplant Bharta
2 md Eggplants, halved
1/2 c Finely chopped onion
2 Green chilies, chopped
1/4 ts Salt
1/4 c Cilantro, chopped
1 tb Ghee
1/2 ts Oil
Rub the ghee over the cut side of the eggplant. Roast until the skin is lightly burned. The eggplant should be completely soft & tender. Peel & mash the pulp with a potato masher. Mix well with onion, chilis, salt, cilantro & oil. Fry in a skillet with a little oil for 3 to 5 minutes. The mixture should be fairly dry. Chakravarti & Morizot, "Not Everything we Eat is Curry"

This Dhaba Style 'Baingan Bharta' is a very popular North Indian dish and one of my personal favourites too. Enjoy it with garam phulkas or parathas, it tastes just amazing.

Ingredients:
(Serves 2)
For Roasting:
Brinjal (round, large) – 2nos
Garlic cloves – 6nos
Oil – a dash
For Tempering:
Ghee – 2 tbsp
Dry red chili – 2nos
Cumin – 2tsp
Garlic chopped – 1tbsp
Ginger chopped – 2tsp
Green chili chopped – 1no
Onion chopped – ¼ cup
Turmeric – ¾ tsp
Chilli powder – 1tsp
Tomatoes chopped – ¾ cup
Salt – to taste
Coriander chopped – a handful
Method:
- To make a good bharta choose a large round baingan or aubergine or eggplant. Make several small cuts on the brinjal using a sharp knife and insert peeled garlic clove in them.
- Apply light oil on the outside of the aubergine and place it on an open fire. You can use a grill and roast the aubergine till it is charred from the outside. Make sure it cooks from all sides.
- Remove the charred eggplant into a bowl and cover and keep aside for 10mins. Now remove them from the bowl and peel away the outer burnt skin. Dip your fingers in some water several times while doing this so that the skin separates easily.
- Using a knife mash up the brinjal. Heat a pan and add ghee, dry red chilies, and cumin. Stir and add chopped garlic. Cook till it starts to brown and then add ginger, green chili, and onions. Toss on high heat till onions sweat (cooks but not browns).
- Sprinkle turmeric, chili powder and give a quick stir. Add tomatoes, sprinkle salt and cook on high heat for 3mins. Add in the mashed brinjals and cook for 5mins.
- Add chopped coriander and toss again. Remove from heat and serve it with Indian flatbreads like roti, chapati, paratha, or naan.

Smoked, charred and a simple preparation of brinjal. An all-time favourite of brinjal lovers or probably they love brinjal because of this preparation.
BAINGAN BHARTA
Ingredients
500 grams large brinjals (bharta baingan)
2 tablespoons oil
1 teaspoon cumin seeds
3 medium onions, chopped
1 inch ginger, chopped
2 green chillies, finely chopped
2 large tomatoes, chopped
1 teaspoon red chilli powder
Salt to taste
2 tablespoon chopped fresh coriander leaves + for garnish
Paranthas to serve
Method
1. Prick brinjals and roast them over direct flame until the skin scorches and starts peeling off and the brinjals start to shrink. Let them cool. Remove skin and mash the pulp completely.
2. Heat oil in a non-stick kadai. Add cumin seeds and let them change colour. Add onions and sauté till translucent. Add ginger and green chillies and mix well. Cook for 1 minute.
3. Add tomatoes and mix well. Cook till soft and pulpy. Add red chilli powder, mix and cook for 1 minute.
4. Add the mashed brinjal and mix till well combined. Cook for 4-5 minutes on medium heat. Add salt and mix well.
5. Add coriander leaves and mix. Switch the heat off and transfer into a serving bowl.
6. Garnish with coriander leaves and serve hot with paranthas.
