Eggplant Omelet
Ingredients:
3 eggs
1 eggplant
¼ cup white onion in moon halves
¼ cup shredder cheese mixture or the cheese that you like
Salt, black pepper (optional) to taste
4 tablespoons olive oil.
First, place the onion in a medium- large mixing bowl with salt and black pepper, and 1 tablespoon of olive oil and put into the microwave at medium power for 5 minutes. In the meantime, peel the eggplant and slice it. After 5 minutes, mix the sliced eggplant with the onion and 3 tablespoons of olive oil, remove and put again into the microwave at medium power for 15 or 20 minutes. When the eggplant and onion mixture is done, beat the eggs and add them to the mixture. Add salt to taste and the cheese as well. Mix everything together and pour on a greased skillet at medium heat.
