What is Shopska Salad? EASY AND SO DELICIOUS Bulgarian Summer Salad
This Shopska salad recipe is perfect in how totally simple it is. Only make this with the best tomatoes or it's not worth it!
Invented by the Bulgarian tourism board in 1960, this simple salad is loaded with fresh crunchy veggies and soft salty Bulgarian feta cheese. It's a great gateway recipe if you're new to Bulgarian food.
Shopska salad vs Greek salad - The two are very close, but my understanding is that Shopska uses sunflower oil instead of olive oil. There are no olives in the salad and no vinegar. Also, if there is a herb present, Shopska will likely have parsley rather than oregano. But as with any regional cuisines, this isn't a blanket statement and there will be variations. This is my Shopska salad recipe, as I learned it from my boyfriend, inspired by his grandma.
Shopska Salad (or Shopska Salata) is a perfect summer salad when tomatoes are at their peak. This is the ultimate tomato recipe because they're really able to shine! Add this to your collection of healthy recipes for dinner.

Recipe and ingredients:
Lentils 200g
Soak in cold water for 20 minutes.
vegetable oil
1 onion
2 garlic cloves
300 grams of pumpkin
1 carrot
Sweet potato 1 piece
3 tomatoes
parsley
salt, black pepper, paprika, turmeric
drain liquid
1 liter of boiling water
Boil 30 minutes
230 g of wholemeal flour
50 grams of pumpkin seeds
50 g of sunflower seeds
50g sesame
50 grams of flaxseed
30 grams of almonds
300ml of water
1 teaspoon dry yeast
Let the dough rise for 40 minutes.

bake at 200 degrees for 45 minutes

I found this recipe online and decided to give it a whirl. It's yummy for the tummy!
1-7oz can of white tuna
6 tablespoons mayo or salad dressing
3 tablespoons sweet relish
1 tablespoon dried parsley
1 teaspoon dried dill weed
1/4 teaspoon curry powder
1/8 teaspoon dried onion flakes
pinch garlic powder
optionally you can add a spritz of lemon juice, salt and pepper to taste, or anything else!
