How To make Ever Ready Bran Muffins
15 oz WheatBran Flakes/Raisins;1Pk
5 c Whole Wheat Flour
2 c Sugar
1 tb Baking Soda AND
2 ts Baking Soda
2 ts Salt
4 ea Eggs; Lg, Beaten
1 qt Buttermilk
1 c Vegetable Oil
Combine the cereal, flour, sugar, soda and salt in a very large bowl. Make a well in the center of the mixture and add the eggs, buttermilk and oil. Stir until the dry ingredients are just moistened and no flour streaks remain. Cover and store in the refrigerator until ready to bake. Batter can be stored for up to 6 weeks. When ready to bake, spoon the batter into prepared muffin tins, filling each cup 2/3rds full. Bake at 400 degrees for 12 to 15 minutes or until done. Makes a total of 5 1/2
dozen muffins.

I make these Cran-Bran muffins using a recipe from Midwest Living. In this step-by-step video, I'll show you just how easy these are to make, some adaptations I made to use what I had on hand, and how delicious they turn out. I was looking for a recipe that uses All Bran Cereal, and what I found was a delightfully simple gem that our whole family enjoyed.

Ingredients:
1 egg
1/4 cup vegetable oil
1 cup milk
1/2 cup packed brown sugar
1 1/2 cups all purpose flour
1/2 tsp sea salt
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp pumpkin pie spice (or cinnamon or apple pie spice)
1 cup whole bran cereal (not flakes)
1/3 cup dried cranberries
1/3 cup pecans, chopped
Topping:
1/3 cup packed brown sugar
1/4 cup all purpose flour
1/4 tsp pumpkin pie spice (or cinnamon or apple pie spice)
2 Tbsp cold butter
Bake at 400 degrees for 15-18 minutes.

Bran Muffins
1 cup boiling water....dissolve 2 cups of Grape Nut cereal in it.
Mix 1 cup of Crisco plus 2 TBSP
3 c sugar less 2 TBSP
4 eggs
1 qt buttermilk
5 c flour
5 tsp soda
1 tsp salt
4 c Kellogg's All- Bran cereal
Bring water to boil and dissolve Grape Nut cereal in it and set it aside.
Mix Crisco though 4 c All Bran cereal together and then fold in the dissolved Grape Nut cereal.
Fill greased muffin tins 3/4 full and bake 400 degrees for 15-20 minutes.
You can leave batter in refrigerator for up to 6 weeks and make fresh muffins everyday but do not mix batter each time... just place batter into muffin tin without mixing.
These are nutritious and delicious ! You may add nuts and raisins to batter.
Bran Muffins
I have been a long-time fan of my local bulk food store. They carry so many interesting and unique things that you don't find at the supermarket. When I saw this big bag of wheat bran for less than $1.50, my mind started racing with ideas about how I could use it. As a fan of the good old bran muffin, this was the first on my list to create with my wheat bran treasure!
1 1/2 cup wheat bran
1 cup buttermilk or sour milk
1/3 cup vegetable oil
1 egg
2/3 cup brown sugar
1 tsp vanilla
1 cup flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 dried fruit (diced dates, raisins, diced apricots, dried cranberries - you could also use chopped walnuts or chocolate chips)
Preheat oven to 375 degrees.
Line standard muffin pan (one dozen) with liners or spray with non-stick spray.
In a large bowl, mix wheat bran and buttermilk/sour milk together. Let stand for 10 minutes.
In another bowl, beat together the oil, egg, brown sugar and vanilla. Add to the bran/buttermilk mixture and combine.
Sift or whisk together the flour, baking powder, baking soda and salt. Stir into the wet mixture until just blended. Fold in fruit.
Divide batter evenly between the 12 muffin cups.
Bake for 15-20 minutes or until tops spring back when gently pressed or a toothpick inserted into the middle of the muffins comes out clean.
Remove muffins from baking tin immediately and allow to cool on a wire rack.
Baking All-Bran Muffins!!
All-Bran Muffins are an all time favorite! Nothing is better than a warm muffin in the morning! Anyone can bake these! Very easy recipe for a breakfast (or late night) treat!
Recipe
Soak
1.5 cup All-Bran in 3/4 cups milk
Add
1 egg and 1/4 a cup of butter
Sift and add
1 cup flour , 1/2 tsp of salt, 2 and 1/2 tsp of baking powder and 1/2 cup of sugar
Add cinnamon and Vanilla extract to taste (one tsp each)
Bake at 400 for 13-17 min or until toothpick comes out clean
serve and enjoy! Freeze to preserve

6 Week Bran Muffin Mix
This is a great recipe mom got from a friend for a 6 Week Bran Muffin Mix. You can literally put this mix in your refrigerator and just use it as you want for however many muffins you want at a time for up to 6 weeks. You can also change up the things you want in them like dried fruit, chocolate chips, whatever you like. So give it a try and let me know what you think about this version and y'all enjoy.

Ingredients:
4 cups of coconut Chia Granola Cereal or raisin bran
2 cups buttermilk
2 1/2 cups flour
1/2 up oil
2 1/2 teaspoons baking soda
1 1/4 cup sugar or 1 1/2 cups Splenda
1 teaspoon salt
2 large eggs or 3 if they are small
Mix together all ingredients and refrigerate for 6 hours.
Bake in muffin cups - lined if you like.
Bake 20-25 minutes in a 375°F preheated oven, 15 minutes if your batter is at room temp.
Batter will keep 6-8 weeks in refrigerator, or you can bake all at once.
You can also freeze the baked muffins.
