MINI MEATLOAF RECIPE | Small Batch Meat Loaf Recipe
This mini meatloaf is topped with a delicious ketchup glaze and is full of amazing flavor. The perfect size for two people and a quick and easy dinner solution.

Meatloaf:
1 lb. hamburger 90/10 blend
1/2 Tbsp minced onion dried
2 tsp garlic minced
1/2 tsp salt
1/4 tsp pepper
1 egg or 1 Tbsp mayo
1/4 cup breadcrumbs
1/2 tsp Italian seasoning
1 Tbsp steak sauce
1 Tbsp ketchup
1 Tbsp Worcestershire Sauce
Ketchup Glaze:
1/4 cup ketchup
1 Tbsp brown sugar
1/2 Tbsp balsamic vinegar
Directions:
In a bowl, combine meat, minced onion, garlic, Italian seasoning, salt, pepper and egg or 1 Tbsp of mayo and mix to combine.
Add in breadcrumbs along with other seasonings including steak sauce, ketchup and Worcestershire sauce.
Form meatloaf into two small loaves and place in baking dish.
Bake meatloaf at 350 degrees F. for 25 minutes.
While the meatloaf is baking combine ketchup, brown sugar and balsamic vinegar to make the glaze.
Then increase the oven temperature to 400 degrees F, remove the meatloaf form the oven and spoon the glaze mixture over the tops and sides of the meatloaf. Return to oven for an additional 5-10 minutes to allow glaze to set up. The meatloaf should reach an internal temperature of 160 degrees F.

Recipe
3lbs 80/20 Ground beef
1/2 Cup diced Onion (Use more if desired, chop to whatever size preferred)
1/4 cup diced Bell pepper (Use more if desired, chop to whatever size preferred)
3 Garlic cloves- minced
1/2 Cup Milk
2 Eggs
2 Slices of bread
1/2 Tsp Worcestershire Sauce
1 tsp Parsley Flakes
1/2 tsp Black pepper
2 TBSP Season All seasoned salt
1 TBSP Mc Cormick Garlic & Herb salt-free seasoning
1 tsp Red pepper Flakes
2 Tsp Paprika
1/3 Cup Barbecue Sauce (Sweet Baby Rays)
1 Tbsp Ketchup
1/2 tbsp Mustard
1 tsp Brown Sugar

INGREDIENTS
2 lbs 85/15 ground beef
1 envelope of beefy onion soup mix
1 sleeve of Ritz crackers
1/4 of a medium-sized bell pepper
1 tsp garlic powder
1 tsp paprika
1/4 cup ketchup
2 Tbsp fresh parsley
1 tsp cracked black pepper
2 large eggs
1/2 cup whole milk
SAUCE
1 cup ketchup
1/4 cup A-1 steak sauce
2 Tbsp dark brown sugar
1 Tbsp diced chipotle peppers in adobo sauce
1/4 tsp cracked black pepper

I can't begin to tell you how much my hubby loves meatloaf. I think he would eat it 3-4 times a week if I made it, then eat meatloaf sandwiches with the leftovers. It's not a hard entree to prepare, it's easy, simple, and a downhome comfort food. We like it with brown gravy, so that is what you will see me making it with today. If you like the ketchup, tomato sauce topping, by all means, use that. Just leave off the gravy. But you might still want the gravy for those creamy, dreamy, mashed potatoes. Directions below.

Meatloaf
1 1/2 lbs ground chuck
1/4 cup onion, chopped, or more if you want
1 egg
salt & pepper to taste
bread crumbs, I used about 1/2 cup
1/4 half & half
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
1 Tbsp parsley
Preheat oven to 425 degrees
Mix all ingredients. Line a sheet pan with foil and spray with nonstick spray.
Turn mixture out onto pan. Shape into a loaf. Bake 40-50 minutes.
Mashed Potatoes
Cube potatoes, as many as you need for your family. Cover with water, add salt to taste, boil until tender. Drain water from pot. Leave potatoes in hot pot to dry up excess water. With wire whisk on hand mixer or stand mixer, whisk potatoes until fluffy. Add butter to taste. Pour in buttermilk a little at a time until fluffy.

Half a cup of grated Romano cheese
One large onion, chopped
Salt and pepper to taste
3 tablespoons of chopped parsley
Garlic powder to taste
Two eggs
Half a cup of seasoned breadcrumbs
One jar of marinara sauce
1 pound of ground beef
One and a half pounds of ground pork
2 cups of diced mozzarella cheese
Mozzarella cheese for the top to taste
