Ingredients
1 tbsp olive oil
3 shallots, diced
Smoked bacon lardons
4 cloves garlic, lightly crushed
1 large heritage tomato, halved
Small handful vine cherry tomatoes, halved
2-3 sprigs of thyme
2-3 sprigs of sage
1½ tbsp English mustard powder
1 tbsp brown sugar
1 dried chipotle chilli, finely diced
1 shot espresso coffee
400g tinned haricot beans in water
1 tbsp molasses
Bread of choice, to serve
Cheddar cheese, to serve
Method
Heat an earthenware casserole over a medium heat, and add the olive oil, shallots, bacon and garlic. Fry off for 2-3 minutes until the edges begin to caramelise, then place the larger tomatoes in the casserole dish, cut side down, along with the smaller ones and their vine. Add a twist of thyme, breaking it up and bruising it with your fingers over the pan, and a few sprigs of sage, stalks removed and leaves torn. Gently stir to move the ingredients around. Sprinkle over the English mustard powder and brown sugar, stirring again to coat all the ingredients. Leave to reduce for a few minutes.
Preheat the oven to 180°C.
Add the chipotle chilli flakes, espresso and 250ml (roughly 1 cup) of water to the pan, along with the haricot beans and molasses. Stir and bring the mixture up to the boil, then transfer to the oven for 25-30 minutes until the mixture has reduced thoroughly and is thick and meaty. Serve over your favourite bread, toasted, with a few slivers of cheddar cheese.
