Competition Brisket Recipe
This Competition Brisket Recipe truly has no equal, and with the help of the Yoder Smokers YS640, Chef Tom will show you how to grill a blue ribbon brisket every circuit judge will fall in love with.
The sweet Plowboys BBQ Bovine Bold and the garlic-tinged R Butts R Smokin’ R Beef rubs make a perfect seasoning pair for this recipe, and Chef Tom foil wraps both point and flat midway through to quickly reach the cooking time finish line. Along the way he discusses how to trim your brisket to impress the judges and goes over how the hang test can help you choose the best slice for turn in. The result is a perfectly tender, juicy brisket that will have you searching for places to put a trophy. This technique has been honed over time as we have cooked with barbecue geniuses like Andy Groneman of Smoke on Wheels Competition BBQ and BBQ Brian Misko of the House of Q.

Smoked Bourbon Marinated Brisket
Marinating brisket is not traditional, but the result was absolutely amazing. This process works particularly well if you use a pellet smoker, as developing bark can be more difficult. The sugars and flavors on the surface start to caramelize for an incredible final product.
Marinade:
1/2 cup Smoked Bourbon
1/2 cup maple syrup
1/2 cup soy sauce
1/2 cup Dijon mustard
2T Worcestershire
4 cloves chopped garlic
2 chopped chipotle peppers in adobo

Learn How to Make Braised Beef Brisket in a Dutch Oven Below.
Serves 8
Prep Time: 10 minutes
Cook Time: ~3 hours
Ingredients:
3 lbs. brisket
1/4 cup spicy mustard
1.5 tbsp. brown sugar
1/2 tbsp. smoked paprika
1/2 tbsp. garlic powder
1 tsp. onion powder
1 tsp. black pepper
1 tsp. salt
3/4 tsp. mustard powder
1 cup chicken or beef broth
Directions:
Preheat your oven to 325 degrees Fahrenheit. Rub the mustard all over the brisket.
In a small bowl, combine the sugar, paprika, garlic, onion, pepper, salt and mustard powder. Sprinkle the spice blend all over the brisket.
Place the brisket in a dutch oven and cover it with the broth. Cover the pot and place it in the oven for 1 hour.
After an hour, flip the brisket over and set your ThermoPro thermometer to 205-210 degrees Fahrenheit. We used a dual probe thermometer since our piece of brisket was long Place the probe into the thickest part of the meat and cover the pot. Place the pot back into the oven and allow it to braise until the desired temperature is reached on your ThermoPro thermometer. If you’d like, you can also remove the lid from the dutch oven along with the thermometer probes, increase your oven temperature to 375 degrees, and place the dutch oven back in the oven for 20 minutes or so to brown the top of the brisket and reduce the liquid in the pot.
Allow the meat to cool slightly, then slice or shred the brisket. Pour the juices on top and serve with your favorite side (we love crispy paprika potatoes).
