INGREDIENTS
For the meatballs:
- 1 lb ground beef
- 1 lb ground veal
- 1 cup dried breadcrumbs
- 2 large eggs, beaten
- 1 cup ricotta cheese
- 1/2 medium onion, grated
- 3 cloves garlic minced
- 1 cup grated Parmesan cheese
- 1 1/2 tsp kosher salt
- 1 tsp black pepper
- 2 tsp dried Italian seasoning
- 2 tbsp olive oil
For the sauce:
- 2 tbsp olive oil
- 1/2 medium onion, grated
- 4 cloves garlic, thinly sliced
- 1/2 tsp red pepper flakes
- 1/2 tsp black pepper
- 1 tsp kosher salt
- 6 leaves fresh basil
- 2 15-oz cans crushed tomatoes
INSTRUCTIONS
For the meatballs:
- Preheat the oven to 425℉.
- In a large bowl, combine the ground beef, ground veal, dried breadcrumbs, eggs, ricotta cheese, grated onion, minced garlic, Parmesan cheese, kosher salt, black pepper, and dried Italian seasoning. Mix the ingredients well to ensure all of the meat and ingredients are well combined with no pockets of non-incorporated ingredients.
- Portion into 8 large meatballs and place them on a parchment-lined baking sheet. Drizzle with the olive oil.
- Place the meatballs in the preheated 425℉ oven and roast until they are beginning to brown, 15-20 minutes. Turn the heat down to 375℉ and bake until the internal temperature reaches 145℉, 18-24 minutes. While they are roasting and baking, prepare the sauce.
- Once the sauce is prepared and the meatballs are roasted, add the meatballs to the sauce. Spoon the sauce over the meatballs and return them to the oven to finish roasting until the internal temperature reaches 160℉, 10-12 minutes. Once finished, remove the basil leaves, top with freshly grated Parmesan cheese, and serve.
For the sauce:
- In a large oven-safe skillet or braiser, warm the olive oil over medium heat. Add the onion and garlic. Sauté until the garlic is beginning to brown, 4-6 minutes. Turn the heat down to medium-low as needed to make sure the garlic doesn't burn.
- Add the red pepper flakes, black pepper, kosher salt, tomatoes, and basil. Bring to a boil and reduce to a simmer. Simmer the sauce for 15 minutes.

From my farm to your home. ????
My name is Kaleb Wyse and here, you will find delicious recipes, videos from my farm, garden, and fun home projects. My knowledge has been earned from years of home cooks and farmers in my family.
A farm is much more than a house to live in; it’s a lifestyle. My passion for gardening and landscaping came from outdoor work with my mom in our expansive farm yard, my love for baking came from innumerable short walks to my grandma’s house to make cookies, and as a farmer, my dad taught me that we are the stewards of our land.
So whether you live in a city center or have decided rural life is for you, I hope to inspire you with the projects and recipes I use in daily life. We can’t all live on a farm, but we all need farms in our lives. From the dirt in my vegetable garden to the flour in my kitchen, I’ll show you everything I love to do.

INGREDIENTS
- 1/2 cup breadcrumbs (about 1 slice of bread)
- 1/4 cup whole milk
- 1 lb ground turkey or chicken
- 1 large egg, beaten
- 1/2 tsp garlic granules
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 3/4 tsp salt
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 cup ricotta cheese
- 1 cup pesto
- 1 cup shredded mozzarella cheese
INSTRUCTIONS
- Preheat the oven to 400°F.
- In a small bowl, combine the breadcrumbs and milk. Stir together and work into a paste, and set aside.
- In a large bowl, combine the ground turkey, breadcrumb panade, beaten egg, garlic granules, onion powder, black pepper, salt, grated Parmesan cheese, and olive oil. Mixture together until all the ingredients are incorporated with no streaks or pockets of breadcrumbs.
- Use a 1 oz cookie scoop (2 tbsp) to create small meatballs. Roll the meatballs between hands until they are smooth, and set them on a parchment-lined baking sheet. Once all the meatballs are prepared, drizzle with an additional 1 ½ tbsp olive oil and place them in the preheated oven. Bake until the meatballs begin to brown and the internal temperature reaches 165°F, 25-30 minutes. Once baked, remove the meatballs from the oven.
- In a medium bowl, combine the ricotta and pesto. Stir together until smooth. Remove any pooled drippings from the meatballs, which sometimes create a collar around the meatball, and place the meatballs in a 9×13 baking dish. Dollop the prepared ricotta pesto mixture over the meatballs and sprinkle with the mozzarella cheese. Return to the oven and bake until the cheese is melted and the ricotta is warmed through, 12-15 minutes.
