How To make Fettuccine with Light Alfredo Sauce
1 lb Fettucine or Linguine
-OR Spaghetti, uncooked 1 c Evaporated skim milk
1/2 c Chopped fresh parsley
1/4 ts White pepper
1/2 c Grated Parmesan cheese
4 oz Green onions, sliced
-(white parts only) White pepper to taste Prepare pasta according to package directions; drain. In a large saucepan, bring the evaporated milk to a simmer over moderate heat. Stir in the Parmesan cheese, green onions and parsley. As soon as it has melted, and the sauce is thick and creamy, pour over cooked pasta. Season to taste with white pepper. Each serving provides: 917 Calories; 37.9 g Protein; 171 g Carbohydrates; 7.7 g Fat; 12.1 mg Cholesterol; 320 Sodium. A viewer recently requested pasta recipes which gave me the perfect change to share this lightened up recipe. Not only is it delicious and way healthier than classic Fettucini Alfredo, it's also a super easy weeknight meal.
If you're feeding a family, you can get this on table in 20 minutes. If you're new to cooking, all you have to do is cook pasta and, in only one other pan, make a sauce that comes together in a snap.
Here are my foolproof tips for cooking pasta perfectly—even ahead of time:
To make this Skinny Fettucini Alfredo, you'll need:
* 1 lb fettucini pasta
* 2 tablespoons olive oil
* 3 cloves garlic, chopped
* 2 tablespoons flour
* 1 cup chicken broth (you can also use vegetable broth to keep this vegetarian)
* 1 cup low fat milk
* 1 cup grated Parmesan
* Salt and reshly ground pepper
* Chopped, fresh parsley, to garnish (optional)

Chicken Alfredo For Weight Loss ????
1 lb chicken breast
Seasonings:
1/2 tsp thyme
1/2 tsp oregano
1/2 tsp black pepper
1 tsp garlic powder
1 tsp paprika
1 tsp chili powder
1 tsp onion
Salt to taste
Cook in 2 Tbsp oil
1/4 cup chicken stock
1.5 Tbsp flour
1.5 cups low fat or 2% milk
1/3 cup low fat mozzarella
Parmesan to taste (1-3 oz)
Pasta water pulls it together
ALFREDO sauce is super easy to make (and quick)!
NEVER BUY JAR SAUCE AGAIN! This recipe is so easy and FAST:
1/2C (1stick) butter
1C heavy cream
1C fresh grated parm
Minced garlic
Black pepper
Sauté mixed garlic in melted butter over low heat 1-2 minutes. Whisk in heavy cream and black pepper to taste and heat over low. Stir in parm until melted (keep heat low, and stay with it! This scalds easily!) Toss with pasta cooked to al dente and serve with desired proteins and veggies. ????
