Fettuccine Alfredo with Sautéed Shrimp Yield: 4-6 Servings
1 Cup Cooked Shrimp
1 Cup Heavy Cream
2 Tablespoons Butter
1 Pound Fettuccine
2/3 Cups Parmesan Cheese, grated
To Taste Salt
To Taste Pepper
Pinch Nutmeg (optional)
Method:
1. In a large skillet, heat the butter and 2/3 cup of cream. Cook on medium heat just until the cream and butter have thickened, about 1-2 minutes. Turn off the heat.
2. While the cream is heating, cook the pasta in boiling salted water until the pasta is still very firm. The pasta should be underdone and firmer than al dente. With fresh pasta, this should take 2-3 minutes.
3. Drain the pasta and transfer it to the pan with the butter and cream. Turn the heat on the pan to low and carefully but thoroughly toss the pasta so it is completely covered with the sauce. Add the cooked shrimp.
4. Add the remaining cream, cheese and nutmeg. Season to taste with salt and pepper. Taste again for seasoning and serve with additional grated cheese.
