How To make Fettuccine with Tomato Avocado Sauce
1 tb Olive oil
1 md Onion; finely chopped
2 Garlic cloves; minced
1 Fresh hot chile pepper
seeded and minced 4 md Tomatoes
:
cut into 1/2-inch cubes 3/4 ts Fine sea salt
1/8 ts Freshly ground black pepper
1/2 c Chopped fresh cilantro
Optional 12 oz Fettuccine made without eggs
2 md Ripe avocados
:
peeled, stone removed, -- and cut into 3/4" cubes 3 tb Extra virgin olive oil
2 tb Freshly squeezed lime juice
Heat the 1 tablespoon olive oil in a large skillet over medium heat. Add the onion, garlic, and chile pepper, and cook until softened, about 5 minutes. Add the tomatoes, salt, and pepper and cook, stirring often, until the sauce has thickened slightly, about 10 minutes. Remove from the heat, and stir in the cilantro. Keep warm. Meanwhile, in a large saucepan of lightly salted boiling water, cook the noodles until just tender, about 8 minutes. Drain well and transfer to a warmed serving bowl. Add the tomato sauce, avocados, extra-virgin olive oil, and lime juice. Pasta With Homemade Creamy Avocado Sauce Recipe | Easy Pasta Recipe | The Sweetest Journey
Learn how to cook an easy and quick pasta with homemade avocado sauce. ????
Ingredients:
8 oz. of Pasta (I used Green Lentil Pasta)
1/2 cup Low Sodium Vegetable Broth (120ml)
1 Tablespoon Lemon or Lime Juice (15ml)
2 Tablespoons Olive Oil (30ml)
1 Medium Avocado
1 Garlic Clove (1 Teaspoon Minced Garlic)
1 Teaspoon Thyme (0.9g)
1 Tablespoon Parsley Flakes (1.62g)
2 Cups Spinach
Optional Topping: Parmesan Cheese
Directions:
1. Cook pasta according to package instructions until al dente. Drain and rinse with cold water in a colander. Set aside.
2. In a blender, combine the broth, lemon juice, olive oil, avocado, garlic, thyme, parsley, and spinach. Blend until smooth. Add more broth, a tablespoon at a time, if too thick.
3. Heat the sauce in a saucepan, over medium-low heat. Add the cooked pasta and stir until the pasta is well coated with sauce. Serve topped with Parmesan cheese.

INGREDIENTS
For the pasta:
1 pound spaghetti
2 cooked chicken breasts, sliced
1/2 pint cherry tomatoes, sliced in half
For the pesto:
1 large California Avocado, ripened
1/2 cup fresh basil leaves, packed
1 large handful fresh spinach
1/4 cup cashew pieces, soaked for at least 4 hours
Juice of 1/2 lemon
2 tablespoons extra-virgin olive oil
2 garlic cloves, minced
1/2 teaspoon sea salt
1 tablespoon nutritional yeast
Freshly ground black pepper, to taste
1 cup reserved pasta water
1/4 cup plain, unsweetened nut milk
