How To make Fiesta Lasagne
9 Pieces Lasagne, uncooked
8 oz Canned diced green chilies
2 c Low-fat cottage cheese
1/2 ts Ground cumin
1 t Chili powder
18 oz Tomato sauce
12 oz Lean ground beef
browned and drained 8 oz Picante sauce
1 c Frozen corn :
thawed
1 bn Scallions -- sliced
2 c Grated Cheddar cheese
- sharp, low-fat -(1/2 cup reserved -for the top) 1 c Low-fat sour cream -- OR...
1 c -Plain, low-fat yogurt
-(reserved for the top) 1/3 c Green olives
Prepare lasagne according to package directions; drain. Stir the diced chilies into the cottage cheese. Preheat oven to 350 degrees F. In a medium bowl, mix cumin, chili powder, tomato sauce and picante sauce. Spread 1/2 to 1 cup of the tomato sauce mixture over the bottom of a 9 x 13 x 2-inch baking dish. Place three pieces of lasagne on top of sauce. Spread half of the cottage cheese on the lasagne and sprinkle half each of the ground beef, corn, scallions and Cheddar cheese. Repeat layering, beginning with sauce. Place a layer of lasagne on top. Pour remaining sauce over lasagne. Cover with aluminum foil and bake for 30 minutes. Uncover, top with sour cream, Cheddar cheese and olives. Re-cover and continue baking for 15 minutes. Let stand 15 minutes before serving. NOTE: If you prefer not to cook lasagne, add 1 cup water to tomato sauce and continue as above. When lasagne is assembled, cover and refrigerate at least six hours before baking. Each serving provides: 385 Calories; 33.6 g Protein; 37 g Carbohydrates; 12 g Fat; 50.8 mg Cholesterol;
1516 mg Sodium. Calories from Fat: 28%

Throw-Together Fiesta Lasagna
I wanted to make lasagna, but I didn't have time to make the noodles or sauce after work in time for dinner. I also didn't have any mozzarella when I got home from the store...of course. :-( So, on to plan B where I used what I had in the pantry and fridge. :-) Not bad and the Mr. was happy so I have no complaints.
I used 80/20 ground meat and drained the fat. The portions weren't cut big because they are very filling! It's the not healthiest lasagna, but it's healthier than normal and that's a win with my guy. ;-)

RECIPE IS AS FOLLOWS: Serving Size 20-25 Guests

THE SAUCE RECIPE:
Achote oil
1 garlic head
1 onion chopped in cube peices
1 cup of Sofrito
2 cans of Goya tomato sauce(Spanish Style) 8oz.
2 Tsp. of Black Pepper
3 Tsp. of oregano
2 Tsp. of cumin
3 Tsp. of Maggi Chicken Flavor bouillon
3 Bay leafs
2 Tsp. of Adobo Goya
2 Pckgs. Sazón Goya con Culantro y Achiote
1 Large Prego Sauce (meat flavored)
1/2 cup of Parmesan cheese
1 cup of Mexican Style Taco shredded Cheddar Cheese
1 cup of mozzarella Cheese Shredded
Meat recipe:
6 ibs. of ground beef
cook for 40 min in high heat
After cooking make sure you drain the oil from the ground beef and mix with sauce and cook for at least 10 min with continuous stirring.
then turn off heat and let it rest.

Lasagna Pasta:
boil water
2 Tsp. of salt
4 Tbs. of oil
let it it sit until brought to a boil
leave pasta for NO MORE!! than 10 min Aldente (see packaging for more directions) and drain the water

Materials you'll will need:
Aluminum pan Large
Aluminum Foil

Extra Cheese for Lasagna:
2 Galbani mozzarella cheese (whole milk)
2 Pkgs. Mexican Style Taco shredded Cheddar Cheese
2 pkgs. of mozzarella Cheese Shredded
2 Large Ricotta Cheese Whole Milk

Cook Time:
Pre-heat oven at 350 degrees
cook time for 30-35 min until cheese melts let it sit and rest for at least 20 min before serving.

Beef lasagna is a well-loved family meal all over the world and my version with a trio of cheeses, béchamel and homemade tomato passata in a word is: SUBLIME. Between each moist layer of fresh egg pasta sheets is a mixture of veal and pork mince, smothered in sweet tomato sauce. There are two key things to make yours as good as mine – you need patience and quality ingredients, no shredded mozzarella or cheap passata here. No need to thank me, just make it, eat it and share it.
