Fig bruschette: a tasty and unique appetizer!
Figs, prosciutto, and warm toasted bread: there is nothing better than that as a tasty and colorful starter!
INGREDIENTS
sliced bread
prosciutto
stracchino cheese
figs
honey
DIRECTIONS
Slice the bread into 2cm thick slices and top with some olive oil and rosemary. Bake at 180°C for 10 minutes. Spread Stracchino cheese on each slice. Place a slice of prosciutto over the cheese and then place a fig (sliced in half) on top. You can add some honey if you like.
Recipe: Homemade Fig Newtons in Bar Cookie Form from Fresh Figs
I love fig newtons. But they are not available in Germany. So, I had to learn to make them myself. These taste amazing. Enjoy!
Fig Newtons:
For the Fig Jam:
500g (about 8) fresh figs
1/2 cup (100g) brown sugar
1/4 tsp salt
1 tsp vanilla extract or 1 tbsp vanilla sugar
1 tbsp lemon juice
For the shortbread crust:
1 1/2 cups (190g) flour
1/2 cup (60g) powdered sugar
2/3 cup (170g) butter
1/2 tsp vanilla extract or 1/2 tbsp vanilla sugar
1/4 tsp salt
To make the jam, cut the tips off the figs, quarter the figs, place them in a medium saucepan and add the rest of the ingredients. Bring to a boil over medium heat. Reduce heat and allow to simmer for 45 minutes to an hour or until the amount of liquid reduces to about half. Puree the remaining fruit pieces in a blender or hand mixer.
For the crust, combine dry ingredients in a large mixing bowl, cut in butter and continue to combine until a cohesive dough forms. Take half the dough and press it into a the bottom of a six-inch baking pan. Pour jam on top. Press remaining dough into the size and shape of the top of the baking pan. Place it on top of the fig jam. Bake at 350°F or 180°C for 35-40 minutes or until top crust is a golden brown.

BETH'S FABULOUS FIG CAKE
Serves 8-10
INGREDIENTS:
3 eggs
1 cup (240ml) of vegetable oil
½ cup (100g) sugar
½ cup(90g) light brown sugar
½ cup (120ml) water
1 ½ tsp (7.5ml) vanilla extract
2 cups (240g) all-purpose flour
2 tsp (10ml) baking powder
¾ tsp (3.75ml) salt
1 ¼ tsp (6.75ml) ground cardamom
1/3 cup (50g) crystalized ginger, diced
5-10 fresh figs (depending on size) sliced vertically (or sliced pears or sliced apples would be great too!)
Crumble:
½ cup (60g) all-purpose flour
½ tsp (2.5ml) baking powder
pinch of salt
2 tbsp (25g) white sugar
2 tbsp (23g) brown sugar
¼ tsp (1.25ml) cinnamon
5 tbsp (75ml) melted butter
1/2 cup (75g) chopped walnuts
METHOD:
Preheat oven to 350F (175C)
Spray a 9” cheesecake pan with baking spray and set aside.
In a large bowl combine eggs, oil, sugars, water and vanilla extract. Whisk to combine and set aside.
In a small bowl combine flour, baking powder, salt and cardamom. Whisk to combine.
Add the dry ingredients to the wet ingredients and whisk slowly to combine. Stir in the candied ginger.
Pour cake batter into pan, arrange figs cut side up, in a circle around the cake. Set aside.
To make crumble, whisk together the flour, baking powder, salt, sugars and cinnamon until combined. Add the melted butter and stir with a fork until a crumble forms. Then stir in the walnuts.
Sprinkle crumble on top of figs and cake, evenly distributed.
Bake cake for 50 mins-1 hour, or until a skewer comes out clean. If top starts to brown too quickly cover with foil until fully baked through. Allow to cool and serve for tea time or for Sunday brunch!
NOTE: This cake reheats beautifully! Just wrap tightly in foil and refrigerate, then place in oven (covered in the foil) and bake at 350F for 20 mins or until warmed through.

FIG BREAD
Ingredients
1 cup dried figs, soaked and pureed
4 cups refined flour + for dusting
1 tablespoon fresh yeast
A pinch + 1 teaspoon castor sugar
½ teaspoon salt
1 teaspoon cumin seeds
1 tablespoon milk powder
¼ cup butter + for greasing and brushing
Method
1. Take yeast in a small bowl. Add a pinch castor sugar ad 2-3 tablespoons water, mix well and set aside to activate.
2. Take flour in an electric beater. Add salt, 1 teaspoon castor sugar, cumin seeds, milk powder, activated yeast, butter and pureed figs and whisk well.
3. Add some water and whisk until a soft dough is formed. Transfer in a bowl, cover with cling film and set aside to prove for 20 minutes.
4. Preheat oven to 180° C. Grease a loaf tin with some butter and dust with some flour.
5. Dust the worktop with some flour, transfer the dough and knock back to release excess air.
6. Shape into thick log and transfer into the greased tin, cover with cling film and set aside to prove for 15-20 minutes.
7. Put the tin into the preheated oven and bake for 10-15 minutes, brushing with some butter. Remove from oven, cool and demould.
8. Slice and serve.

Fig and walnut bread
Today we prepare the bread with the figs and nuts; a rich bread that I want to combine with blue cheese.
I would also have uncork a craft beer for the occasion but I did not make it in time : ( sorry, try it and let me know ; )

Hello everyone!
If you love figs, this is the cake for you! This fig cake — with raisins and almonds — is super moist, not too sweet, and full of that wonderful, syrupy fig flavor.
It’s one of my favorite recipes because the cake is very delicate and it can also be made with pears or sliced apples in the fall. It’s also great for tea time too!
It's perfect for any day and any time: breakfast, brunch, snak or dinner.
