Directions: TO PREPARE THE TARRAGON BUTTER: Saute the shallots in 1 teaspoon butter for 3-4 minutes, or until beginning to brown. Stir into the remaining butter, along with the tarragon. Divide into two mounds; flatten between sheets of wax paper. Place in the freezer. TO COOK THE STEAKS: Preheat the oven to 400 degrees F. Heat the oil in a cast-iron skillet or oven-proof pan over high heat. salt and pepper the filets. Brown on all sides. Put the pan in the oven; bake for 5 minutes (for medium-rare). Let the steaks rest several hours before serving. When ready to serve, top with Tarragon Butter.

Filet Mignon with Rosemary Butter - NoRecipeRequired.com
Filet Mignon is one of my favorite cuts of steak to cook. The tenderness is so very nice, and cooked over really high heat, the outside develops a flavorful crust that provides a great contrast in textures.
As Filet Mignon, has a mild flavor (relative to other steaks), I often love to so do simple sauces, like that Rosemary Butter. I'll show you how to cook the filet off in the pan, an then for the last minute or so, add some butter and fresh rosemary, that give the steak a great favor, and provide a little sauce in the form or a drizzle right over the cooked steak.
It's a favorite of mine.
