How To make Filled Peppers with Meat
1 1/2 lb Beef, ground
3 T Rice, uncooked
1 c Corn flakes
2 ea Egg, well beaten
1/2 t Salt
6 ea Bell pepper, green
1 cn Tomato soup (large)
Note: Use half ground beef and half ground pork if desired. Mix the rice, meat, cornflakes, eggs and seasoning together. Cut tops off the peppers and soak in hot water for 5 minutes. Scoop out the seeds and fill with the meat mixture. Place in a large pan, add the tomato soup and let cook for 1 hour in oven at 300-F. Stuffed Bell Peppers Ingredients – Servings 6
- Bell peppers (6)
- 1 yellow onion, diced
- 2 cloves of garlic, minced
- 1 lb of lean ground beef
- 1 cup of cooked white rice
- 1 tsp salt
- ½ tsp pepper
- 1 tsp Italian mix seasoning
- ¼ cup of plain breadcrumbs
- ¼ cup of parmesan cheese
- 1 large egg
- 1 cup of marinara sauce or pasta sauce
Sauce at bottom of casserole dish
- 2 cup of marinara sauce or pasta sauce
- ½ cup water
Topping
- ½ cup mozzarella cheese for topping

Italian stuffed peppers with cheese and herbs
Italian style Stuffed peppers with beef and cheese with Italian flavours. These Italian peppers make a perfect lunch or even dinner and are ideal prepared in advance. These Italian peppers have a meat filling made from beef, Parmesan cheese, herbs and brown rice. The peppers are first roasted to soften the flesh and bring out the pepper flavours. Simple fresh flavours are combined into the mix resulting in a delicious Italian style meal. Ensure you select even sided large peppers or capsicums when buying. Leaving the stems on gives it a more rustic appealing look, but that’s entirely optional. A serve of two halves per person is perfect but you can also serve half with a nice salad. Enjoy my Italian peppers.

Ingredients
2 lbs ground chicken
3 large bell peppers, tri colored
1/2 green and red bell pepper, diced
1 small yellow onion, diced
2 tsp jerk seasoning
2 tsp all purpose seasoning
1 tsp smoked paprika
1 Tbsp brown sugar
Juice of 1 lime
1 tsp jalapeño pepper paste or 1 jalapeño, diced
1 tsp garlic paste or 1/2 tsp minced ginger
1 Tbsp garlic paste or 4 cloves minced garlic
1 Tbsp tomato paste
1/4 cup water
1 cup yellow rice
1 can black beans, rinsed and drained
1 cup shredded mozzarella cheese
Fresh chopped cilantro for garnish
Jerk Aioli
1/2 cup mayo
1 tsp jerk paste
Juice half lemon or lime
1/2 tsp mustard
2 Tbsp sweet chili

5-6 bell peppers medium to large
2 tablespoons olive oil
½ large yellow onion chopped
3 garlic cloves minced
1¼ pounds lean ground beef
1 can diced tomatoes (14.5 oz)
1 can tomato sauce (8-ounce)
1½ cups cooked rice
¼ cup finely chopped fresh parsley plus more to garnish
1 tablespoon Italian seasoning
1 teaspoon salt
½ teaspoon ground black pepper
1½ cups shredded mozzarella cheese
1. Preheat the oven to 350°F.
2. Cut the bell peppers in half remove seeds and ribs but leave the stem from. Stand the peppers up inside a large casserole dish.
3. In a large skillet, heat the olive oil over medium heat. Add the onion and cook, stirring occasionally, until tender and browning around the edges, about 8 to 10 minutes. Stir in the garlic and cook 2 minutes more.
4. Add ground beef and cook until browned, about 10 minutes, stirring and breaking up any chunks with the back of a spoon while cooking.
Stir in the diced tomatoes, tomato sauce, cooked rice, parsley, Italian seasoning, salt, and pepper. Cook, stirring occasionally, until the mixture is heated through, about 3 minutes. Remove from the heat.
Fold in 1 cup mozzarella cheese.
5. Spoon the filling into the peppers
Sprinkle the filling with the remaining 1/2 cup cheese.
6. Bake for 20 minutes or until the peppers are tender and the cheese is starting to brown. Let cool for about 5 minutes before serving.
Garnish with fresh parsley, if desired.
Serve and enjoy!
