紅燒魚煲Braised Fish Casserole
這次我選了一條大的巴丁魚, 冬菇四隻(要預先浸水), 紅蘿蔔, 青蔥, 蒜頭, 薑, 紅辣椒, 乾蔥頭, 豆卜, 芹菜 This time I chose a large Patin Fish, four mushrooms (to be pre-soaked), carrots, shallots, garlic, ginger, red chilli, dried onion bulbs, tofu puff, celery
首先要把魚清洗得很乾淨, 去除所有內臟和血水First wash the fish very cleanly to remove all guts and blood
裏裏外外都要洗得很乾淨Clean inside and outside
雖然沒有魚鱗, 但都要用刀在魚的表面刮幾下Although there are no fish scales, you have to scrape the surface of the fish with a knife a few times
以去除表面的污漬to remove surface stains
再用豆粉水清洗Wash with soy flour water
剪去所有魚鰭Cut off all fins
因為魚鰭很尖和很有魚腥味because the fins are sharp and have a fishy smell
把魚切成幾份, 每份大概一吋半厚Cut the fish into pieces, each about an 1.5 inch thick
醃魚, 去除魚腥味Pickle fish, to remove fishy smell
把青蔥剪碎, 攪爛finely chop the shallots
然後榨汁then juice
放入魚中put into the fish
加入薑蓉1湯匙Add 1 tablespoon mashed ginger
撈勻mix well
加入紹興酒1湯匙, 胡椒粉少許Add 1 tablespoon Shaoxing wine, a little pepper
撈勻後, 醃15至30分鐘After mixing, marinate for 15 to 30 minutes
用紙巾把魚表面的水分吸乾Dry the surface of the fish with a paper towel
加入蛋白一隻add a egg white
加入粟米粉兩湯匙Add two tablespoons of corn flour
撈勻mix well
煎魚, 用多一點油fry fish, with a little more oil
魚放進鑊之後, 不要太多的移動After the fish is in the wok, do not move the fish too much
用中火慢慢煎Slow fry over medium heat
看見魚開始變金黃色, 就反轉煎另一面When the fish starts to turn golden brown, turn over and fry the other side
直至兩面都變成金黃色, 就可以撈起Dish up when both sides are golden brown
用少許油, 炒其他配料With a little oil, fry other ingredients
聞到有香味, 就可以加入冬菇和豆卜Smell the aroma, you can add mushrooms and tofu puff
加入柱侯醬一湯匙Add a tablespoon of Zhuhou sauce
加入剛才浸冬菇的水Add the water you just soaked the mushrooms in
加糖 一茶匙以中和柱侯醬鹹味Add a teaspoon of sugar to neutralize the salty taste of Zhuhou sauce
加入紅辣椒add red chilli
放入魚塊put in fish
加入蠔油一湯匙, 紹興酒1湯匙Add 1 tablespoon of oyster sauce, 1 tablespoon of Shaoxing wine
把蓋蓋上, 用細火煮5分鐘Cover the lid and cook on low heat for 5 minutes
試味taste
加入陳醋 一茶匙Add a teaspoon of vinegar
把蓋蓋上, 煮3分鐘Cover the lid and cook for 3 minutes
最後加入唐芹(芹菜葉) Finally add celery (celery leaves)
快來一起煮Come and cook together
大功告成 ! You're done ! Yummy !
