Five Spice Tofu

1/4 cup light soy sauce

3/4 teaspoon salt
1 slice of ginger
2 small red chillies, dried

Braised 5 Spice Tofu with Eggs
Braised Tofu, I love them and it is yummy. Braised Tofu with Egg is one of the popular hawker foods in Singapore. It usually comes together with either braised pork and or duck. Whenever I was in Singapore, I always go for this delicacy in Chinatown. It is not easy to find them in Kuala Lumpur especially during Covid 19 Lockdown.
Today I’m going recreate this dish with some Sichuan elements, peppercorn. I will be using a smart cooker for braising which will make life easier (without the need to worry that liquid will dry up and tofu burnt)
Ingredients
1. 10 pieces of firmed tofu
2. 1 sprig of spring onion, chopped
3. 3 clove garlic
4. 6 slices of ginger
5. 6 bay leaves, 3 star anise, 1 inch cinnamon bark
6. ½ tsp red peppercorn and ½ green peppercorn
7. 1 tsp 5 spice powder
8. 20g rock sugar
9. ½ cup soy sauce
10. 6 eggs
Instruction
1. Firstly, place the firm tofu on a rack in a pot and sprinkle some salt over them to draw out the water content so that it is easier to deep fry. After sprinkle the salt let it stands for 30 mins
2. Heat up a fry pan and add 1 cup of oil
3. Deep fry the tofu until golden yellow, dish up for use later
4. Remove the excess oil from the fry pan and add in the garlic and ginger, saute till fragrant
5. Add in the green onion and likewise, saute till fragrant, add 2 cups of water and bring to boil
6. Add in the spices, soy sauce and rock sugar. Mix to melt the rock sugar and bring to boil. Add 1 tbsp of anchovy powder and adjust the taste to your liking.
7. In the smart cooker pot, place some green onion at the botton, stack the tofu on the green onion and pour in the sauce. Add enough water to cover the tofu and steam for 30 minutes
8. In the meantime, and place the eggs into a pot filled with water(enough to cover the egg), cover and bring the water to boil. As soon as the water is boiling, turn off the heat and simmer for 5 mins.
9. Remove the eggs and place them in a pot filled with ice cold water. After 10 mins, peel the eggs and add the egg to the tofu. Make sure the eggs are submerged in the sauce and simmer for 2 hours.
10. Garnish with some green and ready to serve.

I was not aware of how tasty the Five Spice seasoning can be until I thought about seasoning my tofu with it. oh how amazing! From now on I will continue to season my tofu before i use it in any dish. I love that this dish is simple and taste much better than take-out.

Crispy Pan-Fried Five Spice Tofu [ gluten-free + vegan]
This simple pan-fried tofu uses Chinese Five Spice. The mix varies slightly based on the region of China it comes from but the one I have includes cinnamon, cloves, star anise, ginger, and fennel. This aromatic combination imparts an rich aroma that reminds me of Chinese BBQ. I love it when I can get “meaty” flavours out of completely meat-less ingredients!

Where can you buy Chinese Five Spice? Find it in the ethic aisle of major supermarkets. Or track it down in Asian grocery stores. If all else fails, find it online. Here are some options from Amazon:
Using homemade tofu is best for this recipe, but if you don't feel like making it yourself, you can use medium to firm tofu. However, rinse your tofu well in fresh water, then press it to force out the excess water. Here's my easy homemade tofu tutorial that requires only plain soymilk, lemon juice and water:
RECIPE FOR PAN-FRIED CHINESE FIVE SPICE TOFU

Makes 1-2 servings
INGREDIENTS
4 oz (about 125g) firm tofu cut into bite sized pieces, 1/2 thick (about 1 cm)
1/2 tablespoon of cooking oil
Marinade:
1/2 tablespoon soy sauce
1 tablespoon maple syrup
Dry Coating:
1/2 tablespoon nutritional yeast
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon Chinese Five Spice Powder
DIRECTIONS
Blot the excess moisture from the tofu pieces.
Mix the soy sauce and maple syrup together for the marinade.
Toss the tofu pieces in the marinade gently and let rest for a few minutes.
Combine the dry ingredients.
Remove the tofu from the marinade, letting the excess liquid drip off.
Coat the tofu in the dry mix by gently pressing each side into the dry mix.
Heat a non-stick pan on high heat with a half tablespoon of cooking oil.
When the oil will start to shimmer when it is hot enough but not smoking. Place the tofu on to the pan and let cook for 20 to 30 seconds.
Turn the heat down to medium and allow the tofu to cook for another 30 seconds to a minute, or until the bottom is well browned.
Use a spatula or chopsticks to flip the pieces. Continue to cook on the other side for a minute or until that side is browned to your preference.
Remove the tofu from the pan, and let cool slightly before eating.
