Ful Medames: Egyptian Fava Bean Stew with Matbucha and Lavash

Ful medames, also called mudammas or simply fūl, is a delicious stew of braised fava beans made with olive oil, spices, garlic, onion, and lemon juice. The dish is traditionally enjoyed for breakfast in Egypt and many other Middle Eastern countries.
Matbucha is a sauce popular around the Eastern Mediterranean and Middle East, made with red peppers, tomatoes, and aromatics cooked in olive oil. Matbucha can be served at room temperature or warm as part of mezze. Put Ful medames and matbucha together and you get a match made in heaven! Topped with shallots, parsley, a lemon wedge, a drizzle of extra virgin olive oil, and grilled lavash, and you have a fabulous plant-forward breakfast, main course, or shared appetizer that will spice up your menu.

Pureed fava beans “Ful Medames” with tahini - you won’t believe it all started with a can
Fava beans are one the most famous street food in Egypt usually served for breakfast more than any other meal. I am sharing with you the fastest and easiest way to make a delicious pureed fava beans with tahini and olive oil. You can have it as a dip or in a sandwich (pita bread) they are both as good.
Ingredients:
2 cans of plain fava beans (400 g per can)
Very small onion, quartered
1 small tomato
2 garlic cloves
Approximately 1/2 liters of water
3 tablespoon tahini
3 tablespoon labneh or sour cream
2 tablespoon lemon juice
1 garlic clove
3 tablespoon olive oil + more to drizzle on top
3/4 teaspoon salt or to taste
1/2 teaspoon cumin
1/8-1/4 teaspoon cayenne
Ful Medames / Traditional Egyptian Cuisine
Ful Medames, a traditional staple food of Egypt is very popular as a vegan dish throughout the Middle-East too. It's prepared with hearty, creamy Fava beans and loaded with flavour with ground cumin and fresh herbs & served with warm pita bread that's just so fulfilling. Fava beans are packed with vitamins, minerals, fibre & protein that improve motor function & immunity. Here, I have garnished this delightful Fava stew with freshly chopped onion, garlic, green chilly, tomatoes and parsley. Try it. Iam sure you will Love it.
Ingredients
Fava beans/Broad beans 400gm
1 1/2 tbsp mustard oil
3 to 4 garlic pieces
1 medium onion chopped
1 medium tomato chopped
2 green chilly
Spice powders
1/2 tsp turmeric
1 tsp Chilly powder
1 tbsp cumin powder
Salt to taste
1/2 tsp sugar
Coriander /parsley
Method
Wash & Soak Fava beans for 4 to 5 hours. Boil and mash well. Heat mustard oil in a pan. Saute chopped garlic until golden brown. Add in chopped onion, green chilly and saute until translucent. Add in chopped tomatoes and cook until mushy. Add salt and sugar and mix. Add in the mashed beans and cook for a min. Add all spice powders and cook until raw smell dissapears. Add in the coriande/parsley and cook until done. Serve hot with pita bread and garnish with onion, garlic, ????, green ????, coriander /parsley. Enjoy...
