How To make Four Cheese Macaroni
4 c Elbow macaroni - uncooked
1/4 c Butter
1/4 c All purpose flour
2 1/2 c Milk
1 c Shredded provolone cheese
1 c Shredded cheddar cheese
1 ts Dry mustard
1 ts Salt
ds Ground pepper 1 c Mozzarella cheese, diced
1/2 c Parmesan cheese
1 ts Paprika
Julienned raw vegetables Cook macaroni according to package directions until al dente. Drain. Preheat oven to 350 degrees. Butter a two quart casserole dish. Melt butter in a saucepan; stir in flour. Slowly whisk in milk and bring to a boil; cook stirring until sauce thickens. Add provolone, cheddar, mustard, salt and pepper. Stir until cheese melt. Combine sauce and cooked macaroni. Stir in Mozzarella cheese. Turn into buttered casserole. Top with Parmesan cheese and sprinkle with paprika. Bake 30 to 40 minutes or until bubbly and top is browned. Cut into serving sections. Ingredients for 2 servings:
- 40 Gr of Emmenthal Cheese
- 40 Gr of Taleggio Cheese
- 50 Gr of Gorgonzola Dolce Cheese
- 50 Gr of Parmigiano Reggiano
- 1/2 Tsp of Nutmeg
- 1/2 Tsp of Salt
- a Pinch of Pepper (Black or White)
- 125 Ml of Single Cream
- 50 Ml of Milk
- 200 Gr of Pennette Pasta

Four Cheese Truffle Mac n Cheese
* 3 tablespoons butter
* 2 garlic cloves, grated
* 3 tablespoons flour
* 3 cups half-and-half, warmed
* 2 oz gorgonzola cheese, crumbled
* 2 oz goat cheese, crumbled
* 8 oz Fontina cheese, grated
* 4 oz parmesan cheese, shredded
* 1 lb of pasta ( I used Italian Trottole found at Kroger/Ralphs)
* 2–3 teaspoons truffle oil, or to taste
* 2 tablespoons black truffle butter
* ¾ cup Panko breadcrumbs
* Parsley for garnish
Bake for 20-25min @ 375 degrees

Four Cheese Pasta | Serves 4
????INGREDIENTS????
14oz / 400g Mezzi Rigatoni (or other short cut pasta)
1/2 cup / 125ml Milk
1/2 cup / 125ml Heavy/Double Cream
3oz / 80g Taleggio, diced into cubes (see notes)
1.75oz / 50g Gorgonzola, diced into cubes
1/2 cup / 50g Gruyere, grated
1/2 cup / 40g Parmigiano Reggiano, finely grated
1/4 tsp EACH Nutmeg, White (or black) Pepper, Salt (or to taste)
????METHOD????
Pop your pasta in heavily salted boiling water and cook until al dente. Just before draining, retain a cup of starchy pasta water.
In a large deep pan over low-medium heat stir together milk and cream until combined. Add in your Taleggio and Gorgonzola cubes and gently stir until melted. Continue stirring until the sauce begins to thicken.
Add in your Gruyere and Parmigiano and stir until fully blended. Season the sauce with nutmeg, salt and pepper (to taste).
Add in your pasta and stir to combine. The sauce should be light, silky and attach nicely to the pasta. If you over reduce the sauce, use your starchy pasta water to thin out as needed. If your sauce is still too thin, just keep it on a gentle simmer and stir until it coats the pasta.
Serve up and enjoy!
