How To Cook Calf Liver | Good Housekeeping UK
Calves’ liver is most tender liver available and can be found on top restaurant menus. Find out how the chefs cook liver in our step-by-step video.
1. When buying calves’ liver, avoid ones that are dark in colour, slimy to touch or smell strongly.
2. Remove membrane from outside of liver. Without cutting too much of liver, snip out any noticeable tubes using kitchen scissors. If removing tubes and membrane leaves large holes in liver, you’ll find it easier to cook if cut into smaller pieces
3. It is important not to overcook liver or it will become rubbery and grainy. Like steak, liver is best quickly pan-fried. Heat a few cubes of butter in a frying pan over a high heat. When butter is foaming, add the calves liver. Season top with salt and pepper. Fry for about 2min on each side until browned on outside and just cooked all way through.

Ingredients:
beef liver - 1 kg (2.2 lb)
milk - 200 ml (6.76 fl oz)
salt - 10 g (0.35 oz)
black pepper - 5 g (0.18 oz)
cornflour - 100 g (3.5 oz)
herbs of Provence - 5 g (0.18 oz)
oil - 50 ml (⅕ cup)
spicy pepper - 4 pieces
red pepper - 2 pieces
onion - 1 piece
tomato - 2 pieces
oil - 30 ml (1 fl oz)
salt - 10 g (0.35 oz)
black pepper - 5 g (0.18 oz)
water - 200 ml (6.76 fl oz)
bulgur - 160 g (5.64 oz)
TO BOIL 20 minutes
onion - 1 piece
dill - 10 g (0.35 oz)
lemon juice - 30 ml (1 fl oz)
salt - 5 g (0.18 oz)
oregano - 5 g (0.18 oz)

MEAL PREP - How to Cook BEEF LIVER
It’s been a several years in the works, but the first Chef Eugene Teo episode is finally here.
Today I’ll be cooking up one of my current favourite foods - Beef Liver!
Recipe below
Makes 2-3 Serves. Or one giant serve if you’re hungry.
200g Beef Liver (Raw Weight)
200g Beef Mince (95% Lean, Raw Weight)
Market bought Pasta Sauce & Pasta of your choice (Feel free to make your own if you want, I can make an episode on a couple of sauce options, but I’m also incredibly lazy with that when there are so many delicious options out there)
1/2 Bulb of Garlic
Shallots
1. Dice up the Beef Liver into small cubes, then mix it through the Beef Mince.
2. Dice Shallots & Garlic
3. Heat oil in a pan over a medium heat, and cook the Garlic/Shallots for around 5 minutes until translucent, stirring occasionally to avoid any sticking and burning.
4. Turn heat to high, and add Beef/Liver combo, cooking for around 5-10 minutes until only slightly pink
5. Add Pasta Sauce and mix through, leave it to cook over a medium heat for around 2-3 minutes to finish off the Meat.
6. Boil water, and cook Pasta as per packet instructions
7. Serve, Like & Subscribe to the Channel! (Oh, cheeky plug there Eugene. Very well played)
