How To make Fresh Fruit Cake
FRUIT SAUCE:
1 1/2 c Orange juice
3/4 c Sugar
2 tb Cornstarch
1 ts Grated orange peel
1 ts Grated lemon peel
1/4 ts Salt (optional)
CAKE:
1 pk Angel food cake mix
3 Medium peaches
1 pt Strawberries
1 c Blueberries
About 2 hours before serving or early in the day: Prepare fruit sauce: In 2 qt saucepan over medium heat, mix orange juice, sugar, cornstarch, orange peel, lemon peel and salt. Cook over medium heat, stirring constantly, until mixture thickens and boils; boil 1 minute. Cover saucepan and refrigerate about 1 hour or until mixture is chilled. Meanwhile, preheat oven to 375~. Line 15 1/2 x 10 1/2 jelly-roll pan (I use my roasting pan) with waxed paper; grease paper. Prepare angel food cake mix as label directs, but spread batter evenly in prepared jelly-roll pan. Bake cake 20 minutes or until golden. Cover large wire rack with sheet of waxed paper. When cake is done, with small spatula, loosen it from sides of pan; invert onto waxed paper on rack. Lift off pan; peel off paper. Cool cake completely, then return to clean jelly-roll pan or large tray. Cover cake if not using right away. To serve: Spread top of cake with about half of chilled fruit sauce. Slice peaches and strawberries. Arrange peaches, strawberries, and blueberries on cake; brush fruit with remaining fruit sauce. This cake is absolutely delicious and looks very pretty with the different color fruit on top.

3가지 과일을 가득 넣은 생과일 케이크를 만들었어요~
딸기, 망고, 샤인머스캣을 사용했는데 맛도 잘 어울리고 같이 어우러지는 색감이 예뻐서 눈으로도 만족감이 있고 한 조각에 과일이 푸짐해서 더 좋은 것 같아요.
깔끔한 맛의 과일에 진한 크림치즈 크림이 더해지니 더 풍성한 맛이 나더라구요.
높이가 높을 것 같아 7cm 높이의 무스띠를 2장 겹쳐 붙여 틀에 넣고 만들었어요.
생과일이 많이 들어가서 아무래도 빨리 먹는게 제일 신선하고 맛있는 것 같아요~

[만드는 과정]
제누와즈
1. 끓인 물이 담긴 냄비 위에 달걀이 들어 있는 볼을 올리고 설탕과 바닐라 익스트랙을 넣는다.
2. 계속 저으면서 온도가 40도 정도가 될 때까지 중탕하고 냄비에서 내린다.
3. 버터와 우유가 들어 있는 볼을 냄비 위에 올려 중탕으로 온도를 올린다.
4. 달걀물을 고속에서 휘핑해 미세한 거품을 만들고 저속에서 2분 정도 마무리로 휘핑한다.
5. 밀가루를 2번에 나누어 체에 쳐서 넣고 골고루 섞는다.
6. 버터와 우유가 들어 있는 볼을 냄비에서 내려 반죽을 조금 넣고 섞는다.
7. 본 반죽에 넣고 골고루 섞은 다음 오븐 팬에 붓고 175도 오븐에서 38분 정도 굽는다.
8. 아래쪽을 얇게 잘라내고 1.5cm 4장으로 자르고 틀에 맞게 자른다.
9. 포도, 망고, 딸기를 얇게 슬라이스한다.
크림치즈크림
10. 생크림에 설탕과 연유를 넣고 30% 정도 휘핑한다.
11. 차가운 상태의 크림치즈를 넣고 단단하게 휘핑한다.
12. 7cm 높이의 무스 띠 2장을 셀로판테이프로 붙여 준비하고 틀 안에 넣는다.
13. 케이크 시트를 틀 안에 넣고 설탕 시럽(설탕 1 : 물 5를 끓여 식힌 것)을 뿌린다.
14. 얇게 썬 포도를 틀 안쪽에 겹쳐 붙이고 크림을 짠 다음 포도를 중간에 넣는다.
15. 크림을 포도 높이까지 짜고 케이크 시트를 올리고 망고와 딸기도 같은 방법으로 쌓는다.
16. 윗면에 크림을 얇게 바르고 슬라이스 한 과일로 장식하고 냉장실에서 2~3시간 정도 굳힌다.

2 / eggs
65g / granulated sugar (4+1/2 tablespoons)
8g / vanilla sugar ( 1/2 tablespoon)
A pinch of salt
Mix well
100ml / milk (1/2cup - 1 tablespoons )
40ml / vegetable oil ( 3 tablespoons)
80g / all-purpose flour (1/2 cup)
10g / baking powder ( 1,5 tablespoons)
Mix well
1 teaspoon / orange zest
3-4 / sweet apples
Pour into the batter and mix well!
Bake in the preheated oven at 180 ° C / (356 ° F) for 50-55 minutes!
