A dish to celebrate chilies, in Thai we call this kao pad nam prik pao ข้าวผัดนำ้พริกเผา. We use 3 different types of chilies: Thai chili paste (nam prik pao), roasted chili flakes, and fresh chilies, plus Thai basil to tie it all together. Each chili is added for its unique qualities, and they come together into a beautiful, delicious dish! I am making this with chicken, but any protein can be used. I am also including 3 tricks for the perfect fried rice without clumps!

Authentic Thai Recipe for Khao Pad Kraprow Moo | ข้าวผัดหมู่ - ผัดข้าว | How to Make Thai Fried Rice
With this easy recipe you can make a Thai styled fried rice dish at home that will stand up against anything that you can get at your favorite Thai takeout. The ingredients are easy to find at your local supermarket or Asian grocery, and you can use either a pork loin like I did, or use chicken breast for a different flavor.

Prep time: 10 minutes
Cooking time: 5 minutes
Ready in: 15 - 20 minutes
Ingredient List:
200 Grams Pork Tenderloin (about 1/2 cup thinly sliced pork or chicken)
2 Cups Thai Jasmine Rice (fully cooked long grain white rice, cold)
2 Tablespoons Vegetable Oil
2 - 3 Thai Hot Chili
3 - 4 cloves Garlic
1 Tablespoon Oyster Sauce
1 Tablespoon Fish Sauce
1 teaspoon Sugar
1 large Thai Long Chili (or other mild red pepper, bell pepper)
1 - 2 cups Holy basil (Thai Bai Krapow, or other basil leaves)
3 - 4 sprigs Coriander / Cilantro Leaves (as a garnish)
1 small Cucumber (split in half, served on the side)
1 Lime (cut into wedges, served on the side)
2 Green onion (serve one whole spring onion with each serving)
Directions:
1: Add crushed garlic and chili to a warm wok with oil and fry for a few seconds. Then add the chicken or pork. Fry over low heat until the meat is done.
2: Add the oyster sauce, fish sauce, and sugar. Stir it into the meat and fry together until the sugar melts and the sauces form a nice thick and sticky gravy.
3: Turn the heat up high, add cold precooked rice and stir into the sauces. Keep frying and turning the rice over from the bottom of the pan until it starts to dry out and get browned.
4: Add the mild chili and stir in well. Turn off the heat and add the basil. Stir everything well and serve.

The dish literally means stir fried holy basil. ????
You can make it in less than 30 minutes! ⏲
This dish is super delicious and packed with flavor. It is the best with a fried egg on top and served on a bed of hot jasmine rice. ????
The flavor profile is savory, salty, spicy, with subtle hints of sweetness and sweet spice from the holy basil.
Prep time: 15 min
Cook time: 15 min
Serves 3-4
What you’ll need:
1 lb minced meat of choice (I used pork)
14 garlic cloves (I love garlic)
12 Thai chili peppers (less if you can’t handle spice)
2 large eggs (for topping)
1 cup loosely packed holy basil or Thai basil
Seasonings:
1/2 Tbsp fish sauce
1/2 Tbsp seasoning sauce
1 Tsp dark soy sauce
1/2 Tbsp oyster sauce
1/2 Tbsp sweetener of choice (sugar, agave, honey) use less if you like less sweet.
Cooked jasmine rice (1 cup)
