How to Make Crab Rangoon - Restaurant Style
Learn how to make classic restaurant style crab rangoon found at every Chinese restaurant or buffet in America! These are super simple to make although they do take a little time to construct the traditional way. This recipe yields 48 crab rangoon and for not much more than what an 8 piece costs in the restaurants.
What you'll need:
1 (8oz) pkg cream cheese, softened
1/2 cup chopped or flaked imitation crab (krab)
2 green onions or scallions, sliced fine (green part only)
1/2 tsp grated ginger root
1/2 tsp sugar
1/4 tsp soy sauce
48 wonton wrappers (3 square)
Mix all ingredients except wonton wraps in a medium bowl until combined. Cover and refrigerate at least 1 hour, up to overnight. Before filling, let mixture come to room temp for at least a half an hour.
Take one of the wonton wraps and place a level tsp of filling onto the center. Using water and you finger, moisten the center of each side. Bring together the N and W sides, then the S and E sides and then all together into the middle. Set down and slightly push down to flatten the bottoms. Fry** in 350*F oil until golden brown. Serve with sweet and sour sauce and enjoy! Makes 48 crab rangoons.
**You can also bake these by spraying them lightly with nonstick cooking spray and placing them on a cookie sheet into a preheated oven although I have never had any luck baking them. Try out a few at a time at 350*F to see how they turn out before doing all of them to make sure it works for you.

Cream Cheese Wontons with Quick Sweet and Sour Sauce

✅Ingredients
Cream Cheese Wontons:
• 2 cups vegetable oil, for frying
• 24 wonton wrappers
• 8 ounces cream cheese, softened
• 1 large egg
• 1 tablespoon water
Quick Sweet and Sour Sauce:
• ¾ cup brown sugar
• 2 tablespoons ketchup
• ¼ cup rice wine vinegar
• 2 tablespoons soy sauce
• 2 tablespoons cornstarch
• 1 cup pineapple juice
✅Instructions
Cream Cheese Wontons:
1️⃣ Heat vegetable oil in a medium saucepan over medium heat to 350 degrees Fahrenheit.
2️⃣ While oil heats up, whip the cream cheese with a hand mixer until fluffy and smooth.
3️⃣ In a small bowl, whisk together egg and water to make an egg wash. Lightly brush both sides of the wonton wrapper with the egg wash. Put about 1 teaspoon of the cream cheese in the center of each wonton. Fold the wontons by bringing opposite corners together into the center, and repeat with the remaining corners. Pinch shut and be sure to remove any air pockets.
4️⃣ Fry wontons in the hot oil 4 at a time until golden brown. This will only take about a minute. Using a slotted spoon, remove the golden-brown wontons from the oil and transfer to a paper towel-lined plate.
Quick Sweet and Sour Sauce:
1️⃣ For the sweet and sour sauce, whisk together brown sugar, ketchup, rice wine vinegar, soy sauce, and cornstarch in a small saucepan. Pour in pineapple juice and whisk to combine.
2️⃣ Bring to a simmer over medium-high heat. Once simmering, sauce will thicken. Remove from heat and serve hot, or allow to cool before serving.

Cream Cheese Wontons

Ingredients
Dipping Sauce:
3 tablespoons honey
2 tablespoons low-sodium soy sauce
1 tablespoon Sriracha or other hot sauce
1 teaspoon vinegar or rice wine vinegar
1/4 teaspoon sesame oil
Wontons:
8 ounces cream cheese
1 tablespoon Sriracha or other hot sauce (more to taste)
2 green onions, light green and dark green parts, chopped
1 egg
24 wonton wrappers
Vegetable oil, for frying
Directions
For the dipping sauce: Mix together the honey, soy sauce, Sriracha, vinegar and sesame oil in a small bowl and set aside.
For the wontons: In the bowl of a mixer (or you can do it by hand), mix together the cream cheese, Sriracha and green onions until totally combined (scrape the mixer bowl if necessary). In a separate bowl, mix together the egg and 1/2 cup water.
One at a time, assemble the wontons: Place approximately 1/2 teaspoon of the cream cheese mixture on one corner of a wonton wrapper. Use your finger to paint the egg wash all around the edges of the wrapper. Roll the wrapper on a diagonal, starting with the cream cheese corner and stopping when half the wrapper is rolled and the cream cheese mixture is inside. Bring up the 2 ends and use the egg wash to stick them together. Allow the remaining pointed end to naturally tuck backward. (The wontons should resemble tortellini.) As you work, place the assembled wontons under plastic wrap or a light towel to keep them from drying out.
Heat 2 to 3 inches of vegetable oil in a large saucepan or medium skillet until a deep-fry thermometer inserted in the oil registers just under 350 degrees F. (You don't want the oil too hot or it will burn the wontons! Experiment with a spare sheet of wonton wrappers to check.)
In batches of 4 or 5 at a time, fry the wontons for 45 seconds to 1 minute, flipping carefully midway through to make sure they brown evenly. Remove them when you think they still could stand to slightly brown a teeny bit more (because they will slightly brown in the seconds after you remove them from the pan!). Drain the wontons on a paper towel. Repeat with the remaining batches.
It's best to wait 5 to 10 minutes before serving the wontons, as the cream cheese filling can be quite hot. Serve with the dipping sauce.
Cook's Note
While working with the wonton wrappers, keep the opened package covered in plastic wrap and a towel. They dry out quickly!
