How To make Friendship Cake Amish
1 c Butter/Margarine, Melted
1 3/4 c Sugar
3 c Unbleached All-purpose Flour
1 ts Baking Soda
1 ts Ground Cinnamon
1/2 ts Salt
1/4 ts Ground Cloves
1/4 ts Ground Nutmeg
2 Large Eggs
2 c Brandied Fruit
1 c Chopped Pecans
1/4 c Brandied Fruit Juice
brANDED FRUIT STARTER:
15 1/2 oz (1 Cn) Pineapple Chunks
16 oz (1 cn) Sliced Peaches
17 oz (1 cn) Apricot Halves
10 oz (1 jr) Maraschino
1 1/4 c Sugar
1 1/4 c Brandy (Any Brand)
Combine butter and sugar in large mixing bowl. Beat well. Combine next 6 ingredients. Beat well. Add eggs. Coarse chop brandied fruit and stir into batter. Add pecans and juice. Mix well. Pour batter into well-greased 10 inch bundt pan. Bake at 350 degree F. oven for 1 hour. Cool in pan 10 minutes, then remove from pan. brANDIED FRUIT STARTER: Drain all canned fruit. Combine all ingredients in clean, nonmettalic bowl. Stir gently. Cover and let stand at room temperature for 3 weeks, stirring twice per week. As you use it, replace the amount taken with 1 cup sugar. Cover and let stand at room temperature 3 days before using again. Yields 6 cups of brandied fruit. Amish Friendship Bread
A wonderfully moist, yeast baked cake or bread, made with starter dough. The starter dough can also be shared with friends, hence the name. It takes 10 days to make the cake, but it is so worth it.
I messed up posting on my blog, and since I am on vacation I don't have access to my files at home. So I will update the blog next week and then post the links to the recipe below.

STARTER
INGREDIENTS
1/4 cup warm water
1 package (2 1/4 teaspoons) active dry yeast
1 cup all-purpose flour
1 cup granulated sugar
1 cup milk
PREPARATION
Day 1: In a small bowl, combine the warm water and yeast and set aside until bubbly, 5-10 minutes. In a large non-metal bowl mix together flour and sugar, before stirring in the milk and yeast mixture.
Cover loosely and allow to stand at room temperature until bubbly. Pour into a one gallon ziplock bag and seal. Allow to sit at room temperature.
Day 2: Mash the bag.
Day 3: Mash the bag.
Day 4: Mash the bag.
Day 5: Mash the bag.
Day 6: Add 1 cup flour, 1 cup sugar, and 1 cup milk. Mash the bag until well mixed.
Day 7: Mash the bag.
Day 8: Mash the bag.
Day 9: Mash the bag.
Day 10: Pour starter into a non-metal bowl and add 1 cup flour, 1 cup sugar, and 1 cup milk. Mix well with a non-metal spoon. Divide out 1 cup portions of the starter into separate 1 gallon ziplock bags. Keep one bag for yourself, and give the rest away to friends along with this recipe!

MAKING THE BREAD
1 cup Amish Friendship Bread Starter
3 eggs
1 cup oil
½ cup milk
1 cup sugar
½ teaspoon vanilla
2 teaspoons cinnamon
1½ teaspoon baking powder
½ teaspoon salt
½ teaspoon baking soda
2 cups flour
1 small box vanilla instant pudding
1 cup nuts chopped (optional)
1 cup raisins (optional)
INSTRUCTIONS
Preheat oven to 325° F (165° C).
In a large mixing bowl, add ingredients as listed.
Grease two large loaf pans.
Dust the greased pans with a mixture of ½ cup sugar and 1½ teaspoons cinnamon.
Pour the batter evenly into loaf or cake pans and sprinkle the remaining cinnamon-sugar mixture on the top.
Bake for one hour or until the bread loosens evenly from the sides and a toothpick inserted in the center of the bread comes out clean.

takes a while but it sure is good.
starter = 1 cup sugar, 1 cup flour (all purpose) 1 cup milk. stir every day with plastic or wooden spoon. cover and keep on the counter.
on day on day 5 add 1 c. flour, 1 c. milk and 1 cup sugar. then stir every day till day 10. on day 10 add 3 cups veg. oil, 9 eggs 6 cups flour, 1 1/2 cups milk. 1 Tablespoon vanilla, 3 cups sugar, 4 1/4 teaspoon baking powder, 2 tablespoons cinnamon, 1 1/2 teaspoons salt, 1 1/2 teaspoons baking soda, 2 cups walnuts or pecans.
