How To make Frijoles Borrachos
2 c Pinto beans
6 c
water or more as
needed 12 oz Beer
2 ts Bacon drippings or
Peanut oil 1 lg Onion :
chopped
2 Garlic cloves minced
2 Fresh jalapenos or
1 To 2 serranos :
chopped
2 Pickled jalapenos chopped
1 t Chili powder
1 t Salt :

Pick through the beans and rinse them, watching for any gravel or grit. Soak the beans in water, enough to cover them by several inches, preferably overnight. Drain the beans, and add them to a stockpot or a large, heavy saucepan. Cover them with the water and beer. Simmer the beans, uncovered, over low heat. After 1 hour, stir the beans up from the bottom and check the liquid level. If there is not at least an inch more water than beans, add enough hot water to bring it to that level. Simmer the beans another 30 minutes, then check them again, adding water as needed. When the beans are well softened, add the remaining ingredients, and continue simmering. Cook at least 15 more minutes, keeping the level of the water just above the beans. The beans are done when they are soft and creamy but not mushy, with each bean retaining its shape. There should be extra liquid at the completion of the cooking time, although the beans should not be soupy. If you want the liquid a little thicker, squash a few of the beans in the bottom of the pot with a potato or bean masher. Serve the beans immediately, or cover them and keep them warm for as long as 1 hour. Or let them cool, and refrigerate or freeze them for later use. Shared and MM by Judi M. Borracho Beans (Frijoles Borrachos)
Borracho beans (frijoles borrachos) are spicy pintos and bacon simmered in beer. Make this Mexican recipe for a delicious side dish of drunken beans!

Ingredients
1 lb dried pinto beans (See Note 1)
3 slices bacon, cut into 1 pieces
1 medium yellow onion, diced
1 jalapeño, diced (or Serrano for spicier)
4 garlic cloves, minced
14 oz can diced tomatoes (don't drain)
1 tsp chili powder
1 tsp Mexican oregano
1/2 teaspoon ground cumin
12 oz bottle dark beer (XX or Negra Modelo)
1/4 cup cilantro, chopped
Instructions
Pick through and discard any debris from dried beans. Rinse the beans under cool water. Transfer the beans to a large pot or Dutch oven and cover with 8 cups of water.
Bring beans to a boil, reduce heat to simmer and cover. Cook for 1 1/2 hours. Add salt and cook another 30 minutes, uncovered. Drain the cooked beans, transfer to a large bowl, and set aside.
Add the bacon to the large pot or Dutch oven and render until crisp and brown. Remove with slotted spoon and set aside, reserving bacon fat.
Add the onion, jalapeño, garlic, tomatoes, spices and saute in the reserved bacon fat for 10 minutes. Add the cooked beans, half of the bacon and dark beer, stirring to mix. Cook on low heat for 15 minutes (See Note 2).
Before serving, stir in chopped cilantro and top each bowl of beans with cooked bacon.
Notes
1. I find it optional to soak the pinto beans 8 hours. Using a bean recipe from Diana Kennedy, I realized it was optional to soak 1 pound dried pinto beans 8 hours (overnight) or cooking dried beans directly. It made no difference texture wise. Beans were cooked and in a side by side taste test, no one could tell me which were soaked! What is does do: Soaking beans before cooking helps to remove some of those indigestible sugars that may cause flatulence.
2. For thicker beans, use a potato masher and mash the beans several times and stir.

Frijoles charros recipe
Servings: 8-10
Cook the beans
1 lb pinto beans
1/2 medium white onion
6 garlic cloves, peeled
12 cups of water
2 tsp of kosher salt
Bean paste
1 cup of the cooked beans
1 cup of the bean broth
1/2 cup water (to get the last of the paste from blender)
Meat prep
6 oz ham (5 slices)
5 bacon strips
4 beef franks
12 oz pork or beef chorizo
Vegetable prep
3 garlic cloves, minced
10 oz roma tomatoes, diced
1/2 medium white onion
1 serrano or jalapeño pepper (optional)
