Sometimes this is called a “queso flameado” but queso flameado is usually lit on fire with a shot of tequila - we’re not doing that today. We’re making a simple choriqueso the way we used to experience it here in
South Texas on the border. Sometimes this is made with rajas, sometimes with mushrooms or other chile pepper and onion toppings, but today we’re keeping it simple.
A lot of my barbecue passion and experience came from my father and grandfather, but the choriqueso and cabrito experience came from my father in law – Frank Nieto!
Today we’re cooking over the fire on the ProPit RPG Grill but you can cook this on the stove top or in the oven, whatever works best for you. All you need for this recipe is two packages of Chorizo de San Manuel, our favorite chorizo, and two packs of queso oaxaca.
This recipe is so, so easy to make. All we have to do is cook the chorizo in the pan, add the grated cheese, and then pull yourself a big ol delicious choriqueso taco. You can top this with your favorite salsa, guacamole, or anything else you like. Let’s fire it up and cook some choriqueso!

These amazing cheesy GROUND BEEF EMPANADAS will totally amaze you, they are hearty and packed with delicious flavor. They are easy and quick to make. I often make and serve these delicious ground beef empanadas for my Ron and I and also when I'm having family over for fun weeknight or weekend dinners, and they rave over them, including my grandchildren. I love to serve them with a big pot of pinto beans or a cold salad, and I never forget to side them with my salsa de molcajete and guacamole for a delicious topper. The combination of the poblano peppers, onions, tomatoes and the sweetness of the carrots with the cheesy filling are enough to make this one of your favorite meals.
MASA INGREDIENTS --------------------------
2 C. Maseca (yellow or other)
1 tsp All purpose flour
3/4 tsp salt
1/2 tsp baking powder
1 &1/2 to 1 & 3/4 C. warm water (you adjust)
MEAT FILLING --------------------------
1 lb. ground beef 80/20
1/2 small onion (diced)
2 roasted poblano peppers (diced)
1 large Roma tomato (diced)
1 med carrot (little cubes)
2 tsp Beef bouillon (I used knorr)
1/3 C. water
spices from molcajete
1/2 tsp salt (you decide amount)
SPICES IN MOLCAJETE-------------------
1/2 tsp peppercorns
1/2 tsp cumin
3 whole Allspice (pimienta gorda)
1/4 C. water
1/4 tsp salt

This is an amazing salad, perfect side dish, dip or full meal. There is no doubt that this salad is on top of my list when barbecuing, grilling burgers or when I need a potluck dish because it's always a hit, i use it as a garnish in our meat tacos or a a topping in our burgers. My Ron always asks for it. When entertaining friends i like to set out an assortment of chips and serve it as an appetizer dip, then I watch it disappear quickly. If you're a vegetarian, and looking for a perfect meal this is it, just leave out the cheese and your set, you can make the perfect lettuce tacos, always crunchy and delicious. It's always best when eaten the same day, or your avocado can turn brown, this BLACK BEAN AND CORN SALAD, is easy to make and it's loaded with nutrients.
INGREDIENTS
3 ears of corn
1 Tbsp salt (for boiling corn)
2 Cans black beans (drained and rinsed)
1/2 med purple onion (diced)
1/2 large orange bell pepper (diced)
1 pint cherry tomatoes (cut in half)
1 Large jalapeño (seeds removed and diced fine)
1 large garlic clove (finely minced)
zest of 1 lime
med/large bunch chopped cilantro
COTIJA cheese 1/3 10oz. package (crumbled)
1/2 -3/4 C. Zesty Italian dressing
1 large avocado (cubed)
salt to your liking
• you can leave out the cheese if vegetarian
• best if eaten the same day

The EASIEST Way To Make Tamales | RAJAS CON QUESO TAMALES
Hello my beautiful fam! Welcome back to my kitchen first of all I want to thank you for being part of our family, and allowing me to be part of yours!!!! today I’m going to share with you how to make the easiest and most delicious tamales de queso con Rajas! My Favorite!! There is two ways we make them, one using chile poblano mix with a delicious spicy tomato salsa, and the other one with just pickled jalapeños (this is what we do when we make regular meat tamales and we have leftover masa????) both are super delicious and let’s not forget how easy they are to make, I prefer making this ones because we don’t have to wait hours for any meat ???? we know that’s what takes the most time while making tamales☺️ keep in mind like every recipe and every household there are tons of variations that make this delicious recipe, you can always adjust it to your taste, I really hope you enjoy it as much as me and my family do, and as always if you do please don’t forget to give me a big thumbs up, comment down below your thoughts and if you new to my channel please hit that subscribe buttons so you can be part of our family!!!!!!

What can go wrong???
Not soaking the corn husks long enough can cause the masa not to stick, soak for at least 2 hours ????
Spreading the masa on the rough side of the corn husk can cause for your masa to stick and makes it difficult to remove from the corn husk make sure you spread on soft side ????
Not adding enough liquid can cause your masa to not spread easily, test your masa by adding a little ball to glass of water, if masa floats, then it’s ready to be used!!!
‼️‼️Tip!!! Make sure your masa sets before eating ????
Ingredients: depending on how much masa and filling you use for each tamal, it will depend on how many tamales you get, I got around 35 tamales ????
6 cups Maseca for tamal
1 1/2 cup lard or vegetable shortening
2 tsp baking powder
2 tsp salt
4 cup chicken broth/ water
3/4- 1 cup jalapeños juice
16 oz corn husks
Filling:
Pickled jalapeños
30 oz cheese, I used Oaxaca, Monterey Jack is another one I like to use ????
8 poblano peppers
2 large tomatoes
2 Roma tomatoes
4 serrano peppers
1/2 onion sliced
2 garlic cloves
1/4 cumin
1 tbsp bouillon
1 serving of love ????
