How To make Fritters and Deep Fried Foods
Fritter Batter: 1 C. all-purpose flour**
1 Tsp. baking powder
1 Tsp. salt***
2 eggs
1/2 C. milk
1 Tsp. vegetable oil
1 Thin Batter:
1 C. all-purpose flour**
1 Tsp. baking powder
1/2 Tsp. salt***

1 C. milk
1/4 C. vegetable oil
Prepare food to be fried (see suggested foods below). Thaw frozen foods completely before frying. Dry food completely before dipping into batter. Use Fritter Batter with chopped or shredded foods; use Thin Batter when you want to retain shape of food. Heat vegetable oil (2 to 3-inches) in deep-fat fryer or kettle to 375 degrees. Beat batter ingredients in bowl with hand beater until smooth. To prepare fritters: Stir about 1 cup suggested food into Fritter Batter; drop by level tablespoonfuls into hot oil and fry until completely cooked, about 5 minutes. Drain. Suggested foods for fritters: Chopped cooked shrimp or ham, cubed luncheon meat, corn, chopped apple or banana, pineapple cubes. To deep-fry foods: Coat suggested food with flour. Dip food into Thin Batter with tongs or fork, allowing excess batter to drip into bowl; fry in hot oil until golden brown. Drain. Suggested foods for deep-frying: Whole shrimp, scallops, oysters, fish fillets, chicken pieces (partially cooked ), cutlets, eggplant slices, cauliflowerets, onion rings, zucchini slices, pineapple slices, bananas (cut into fourths), apple slices and apricot halves. **If using self-rising flour, omit baking powder and salt. ***If adding salted foods to the batter, omit salt.

Ingredients for Golden Fried Prawns:
(Tsp- Teaspoon; Tbsp- Tablespoon )
- Prawn or Shrimp - 450-500 gms (shelled and deveined)
Marinate Prawns with :
- Salt- 1/2 tsp
- Pepper Powder- 1/2 tsp
Ingredients for coating the prawns:
- All purpose flour (Maida)- 1 US cup measure seasoned with a pinch of salt and pepper powder.
- Whisked eggs-2
- Panko Bread Crumbs- 1.5 US cup measure
-Salt- 1/4 tsp
- Pepper Powder- 1/4 tsp
Other Ingredients:
- Oil for deep frying
Preparation:
- Clean and devein the shrimps/prawns and make diagonal cuts on the inner side at 3 places to prevent the prawns from curling up.
- Marinate the prawns with salt and pepper powder and set aside for 30 mins in room temperature.
- Take 3 glass containers.
- Add the all purpose flour, whisked eggs and the Panko bread crumbs in each
Process:
- Firstly add the marinated prawns/shrimp in the bowl of all purpose flour and dredge these completely to coat them with the all purpose flour.
- Take the shrimp one at a time and add them in the whisked egg.
- With your left hand coat the shrimp with the whisked eggs and drop them in the bowl containing Panko bread crumbs.
- Now with your right hand coat the shrimp with the Panko breadcrumbs pressing it well to make it stick.
- Arrange in a plate. Repeat till all are done.
- You can arrange in 2 plates and keep these in the freezer for minimum 1 hour.
- You can also freeze this longer and fry later.
- Heat oil till medium hot and add the coated prawns. Do not crowd the pan.
- Do not stir for 1 minute and then stir and fry till golden in colour.
- Fry for a total time of 4- 5 mins on medium heat.
- Fry till they are crisp and golden brown
- Fry the rest in the next batch.
- You may also not fry all the shrimps and keep them frozen and fry later as required.

These fried shrimp fritters make for a quick and easy snack and are often prepared as an appetizer or chinese party food in malaysia and singapore. The easy to prepare batter is made in a way that gives the deep fried prawns that golden lightly crispy texture and puffed up appearance that is typical for this fritter dish.

The full recipe is below

12 prawns, remove shell leaving tail on and devein
⅛ tsp salt
⅛ tsp white pepper
Vegetable oil
Batter:
3 tbs potato starch
4 tsp plain flour
½ tsp baking powder
⅛ tsp salt
3 tbs vegetable oil
2 tbs water
1 egg white
Season prawns with salt and pepper and set aside.
Mix batter ingredients together. It should have a slightly thick consistency.
Heat oil in a wok to medium heat.
Coat each prawn generously except the tail and place straight into frying oil.
The baking powder in the batter will cause it to expand upon frying.
This gives it the puffy appearance and the prawn should float almost immediately.
Tip: ensure there is enough cooking oil in the wok otherwise it may not puff up where the prawn is in contact with the wok.
Continue frying until golden brown.
Remove and drain well.
Serve immediately.
