How To make Frozen Pumpkin Mousse
3/4 c WATER
3/4 c SUGAR
3 EGG WHITES
1 pn CREAM OF TARTAR
1 1/2 c PUMPKIN, pureed and drained
-well 1 ts PUMPKIN PIE SPICE
2 tb RUM
1 c WHIPPING CREAM, beaten until
-stiff peaks form In a heavy saucepan, boil water and sugar until syrup reaches soft ball stage (238-degrees F on a candy thermometer). While syrup is boiling, using an electric mixer, beat egg whites with a pinch of cream of tartar until stiff peaks form. With mixer running, pour hot sugar syrup into egg whites in a steady, thin stream. Continue beating until mixture is entirely cool (this may take more than 10 minutes). Fold in pumpkin and pie spice. Beat rum into whipped cream and fold into pumpkin mixture. Turn mousse into a souffle dish that has been fitted with a paper collar; freeze at least 4 hours. Remove mousse from freezer and place in refrigerator about 30 minutes before serving. Spoon into dessert dishes and serve with gingersnap cookies. From "The Hay Day Cookbook," by Sallie Y. In this video, World Wide Campus News & Entertainment as the next autumn season recipe will be showing you how to make one of those elegant spiced squash pudding is Pumpkin Mousse. #pumpkinmousse #savesprout
2 envelopes of Knox Unflavored Gelatin
¼ cup of Cold Water
½ cup of Boiling Water
15 ounce can of Libby’s 100% Pure Pumpkin
1 tablespoon of Pumpkin Pie Spice
2 cups of Heavy Whipping Cream
¾ cup of Granulated Sugar
First you want to sprinkle the gelatin over cold water, stir around, let sit for a two to three minutes, then pour in the boiling water, keep stir around to dissolve, and let sit to cool slightly. In a large bowl, put in the pumpkin, spices, then the gelatin mix, and blend it nice and well combined. Set it aside to prepare the thickened cream. In a frozen metal bowl, pour in the whipping cream, sugar, and over whip on high until very thickened. Once after thickened with cream and sugar, add it in the pumpkin and gelatin mixture, and fold it in. Using the larger or smaller sized ice cream scooper, spoon the pumpkin batter into each of the plastic dessert cups about half way through. Cover tightly with some plastic wrap, and refrigerate for 1 hour. After 1 hour, take it out from the fridge, remove some plastic wrap, top it with some whipped cream or cool whip, and some more pumpkin pie spice on top.
