Ingredients:
Soaked Fruit:
3/4 cups diced dried pineapple [120 g]
3/4 cups golden raisins [120 g]
1/2 cup diced dried apricots [80 g]
3/4 cups chopped dates [120 g]
1/2 cup red candied cherries [80 g]
3 tbsp diced candied ginger [40 g]
2 tsp orange zest [4 g]
3/4 cup rum or brandy (non-alcoholic substitute - cranberry or apple juice) [180 mL]
1/4 cup cranberry juice (substitute with apple juice) [60 mL]
Batter:
8 tbsp unsalted butter (room temperature) [114 g]
1/4 cup vegetable oil [60 mL]
1 cup dark brown sugar [220 g]
1/2 tsp salt [2.8 g]
1/2 tsp cinnamon [1.3 g]
1/4 tsp allspice [0.5 g]
1/4 tsp nutmeg [0.6 g]
1 tsp baking powder [4 g]
2 large eggs (room temperature) [114 g without shell]
2 tbsp maple syrup (substitute with corn syrup) [40 g]
1/3 cup cranberry juice (substitute with apple juice) [80 mL]
1 tsp vanilla extract [5 mL]
1.5 cups all-purpose flour [180 g]
1 tbsp unsweetened natural cocoa powder [7.4 g]
1/4 cup toasted shelled/salted pistachios [30 g]
1/4 cup toasted chopped almonds [30 g]
1/4 cup toasted chopped pecans [30 g]
1/4 cup toasted chopped walnuts [30 g]
Decorative Topping: (optional)
1/2 cup red candied cherries [80 g]
1/4 cup pecan halves [30 g]
Glaze:
additional rum or brandy, as needed (non-alcoholic substitute - simple syrup)
NOTE: with alcohol and wrapped tightly with plastic, this cake will keep for 2 months at room temperature. It can be served immediately. But for the best flavor, we recommend aging the cake for at least 1 week. Brush with alcohol once a week, and again right before serving.

INGREDIENTS:
• 300g raisins
• 300g sultanas
• 200g cherries glacé
• zest from 1 lemon
• zest from 1 orange
• 100ml pineapple juice
• 225g softened butter
• 225g soft brown sugar
• 4 medium eggs
• 250g plain flour
• 2tsp mixed spices (ground cinnamon, ginger, nutmeg, cloves)
• 40g cashew nuts
• 40g walnuts
• 40g hazelnuts
• sugar glaze (200g powdered sugar + 3 tbsp milk + vanilla extract)
INSTRUCTIONS:
1. Put the raisins, sultanas, cherries in a bowl with the zest and 100ml pineapple juice. Stir for few times, cover with cling film and leave to soak for one day stirring occasionally.
2. Beat the butter and soft brown sugar together in another large bowl until creamy.
3. Add in 4 eggs and beat until sugar is slightly dissolved.
4. Add flour and spices and gently incorporate them until smooth.
5. Add nuts and incorporate.
6. Add the soaked fruits and stir until well mixed.
7. Line a 20 cm deep round /square cake tin with 3 layers of baking paper.
8. Put the batter into the cream tin and level the top.
9. Cut 2 pieces of baking paper to the same size as the top of the cake and cut a 3cm hole in the centre of each. Lay on top of the cake- this will help stop the top browning too much during the baking.
10. Bake in the preheat oven at 150°C for one hour then reduce the oven to 140°C and bake for another 2 hours or 2 hours and half or until a skewer inserted in the middle comes out clean.
11. Cool the cake in the fridge for few hours or overnight before removing from the tin.
12. Remove the cake from the tin and remove the paper.
13. Decorate how you like.
14. For sugar glaze just mix with a spoon the powdered sugar, milk and vanilla extract.
Enjoy it!
NOTES:
• Pineapple juice can be replaced with any other fruit juice or tea. Recommend is to use brandy but I don't have.
• Use any nuts or dried fruits but in the same weight.
• Make sure all the ingredients are at room temperature.
• Please use 3 layers of baking paper in the cake tin to prevent from burning the cake as need to bake for at least 3 hours.
