1/2 sm Honeydew melon
1 Ripe large papaya, peeled
Seeded cubed 1 pt Strawberries stemmed and
Hulled 1 cn Pineapple chunks drained
Jalapeno Citrus Dressing 1/3 c Orange juice
3 T Lime juice
3 T Minced fresh mint, basil
Or cilantro 2 Jalapeno peppers seeded,
Minced 1 T Honey
Scoop seeds from melon. Remove fruit from rind with melon baller or cut into wedges. Remove rind and cut into cubes. Place in large bowl. Add fruits and dressing. Gently toss to combine. Serve immediately or cover and refrigerate up to 3 hours. Garnish with mint. ▢1-2 Tbsp water

▢1 Tbsp Balsamic vinegar
▢6 Tbsp flavorless oil - avocado oil is my favorite

▢1 Tbsp Dijon mustard
▢1 Tbsp poppy seeds
▢1 Tbsp honey
▢1 lemon

FOR GREEK YOGURT DRESSING 2:49

▢2 Tbsp plain Greek yogurt
▢1 tsp Dijon mustard

FOR PEANUT SALAD DRESSING 3:36
▢2 Tbsp unsweetened smooth peanut butter
▢1 tsp grated ginger
▢1 tsp grated garlic
▢1 Tbsp soy sauce
▢1 tsp sesame oil
▢1 lime
▢1-2 Tbsp water
INSTRUCTIONS
Maple Mustard, Greek Yogurt, Lemon Poppy Seed, and Peanut salad dressings simply add ingredients to a sealable jar and shake to combine.
Cilantro Lime and Citrus Basil Dressings add ingredients to a jar wide enough to fit your immersion blender and blend until smooth.

Vinaigrette from Deborah Madison's The New Vegetarian Cooking for Everyone
Ingredients:
1 large jicama or 2 medium - about 2 pounds, grated, diced, or sliced into 2-inch matchsticks
1 clove garlic
1/8 teaspoon salt
grated or minced zest of 2 lime
2 to 3 tablespoons fresh lime juice or lemon juice
2 tablespoons chopped green onion or finley diced shallot
1/2 jalapeno chile, seeded and minced
1/2 teaspoon cumin seeds (or a heaping 1/4 teaspoon ground cumin)
1/2 teaspoon coriander seeds (or a heaping 1/4 teaspoon ground coriander)
1/4 teaspoon dry mustard
1/3 cup olive oil
2 tablespoons chopped cilantro
Recipe summary: bloom spices in oil. Add remaining ingredients (except for jicama) and let sit for 15 minutes. Grated, chop, or dice jicama and stir in vinaigrette. Season with salt, pepper, and more lime juice, if needed.
