Fresh Fruit Salad & Homemade Strawberry-Lime Soda
It is the Dog Days of Summer and there is nothing better than biting into a spoonful of refreshing fruit salad and washing it down with homemade strawberry-lime soda. I remember Grandma Bessie giving me an eye wink, passively letting me know that she spotted me sneaking fresh fruit from the bowl while making this salad. At the time my job was taking fruit from the cutting board and placing it in the bowl to combine. Anyway, I hope you enjoy this recipe as much as I do.

HOMEMADE STRAWBERRY-LIME SODA
simple syrup, recipes below
1 1/2 lb. strawberries, tops removed
2 limes (zest from 1 lime, juice from both limes)
1 1/2 liters lemon-lime (or club) soda
1. Place strawberries into a blender. Blend on high speed until liquified.
2. Place sieve on a large bowl and strain blended strawberries to remove majority of the seeds. Use a silicone spatula to push liquid through the sieve.
3. Pour in simple syrup and stir to combine. Add the lime juice and zest. Combine.
4a. Pour in lemon-lime (or club) soda. Allow soda to settle and pour into a serving bottle or pitcher. Refrigerate. This version taste more like punch than soda.

4b. Pour strawberry mixture in a jar and refrigerate. Before serving, place some of the mixture into a glass. Add the lemon-lime (or club) soda to the glass. This version taste more like soda than punch.
TRADITIONAL SIMPLE SYRUP
1 cup sugar:1 cup hot water (will last up to 4 weeks)
2 cups sugar:1 cup hot water (will last up to 6 months)
1. Dissolve sugar into the water. Allow it to cool.
2. Use immediately or store in an airtight container and refrigerate. If you add 1 Tbsp vodka before refrigerating, it will extend the shelf life of the simple syrup.
STEVIA SIMPLE SYRUP
24 stevia packets:1 cup hot water
or
1/4 cup stevia:1 cup hot water
1. Dissolve sugar into the water. Allow it to cool.
2. Use immediately or within 24 hours.
TANGY CITRUS HONEY DRESSING
1/4 cup fresh lime juice
1/4 cup fresh (or purchased) orange juice
pinch of cinnamon
1/3 cup honey
1. Place all of the ingredients into a jar. Close the jar and vigorously shake until combined.
2. Place a pot over medium-high heat. Pour in the dressing, bring it to a boil, then reduce it to a simmer. Reduce the dressing until the consistency thickens but DO NOT allow it to turn into a syrup. It should look like a semi thick liquid.
3. Allow the dressing to cool.
FRESH FRUIT SALAD
1 pineapple peeled, cored and diced
1 - 2 mangos peeled, seeded and diced
1 lb. strawberries tops removed and sliced in half
2 peaches peeled, seeded and diced
3 kiwis peeled, seeded (optional) and diced
1 cup blueberries
1 jalapeno pepper seeded and minced (not a fruit but add if you like heat add it)
1 lime zested
tangy citrus honey dressing, recipe above
mint (or basil) to garnish, optional
1. Place all ingredients except mint (or basil) in a large bowl. Drizzle with the dressing, gently toss making sure all of the fruits are coated and place covered into the refrigerator until ready to serve. See notes.
2. Serve as is or garnish with chopped fresh mint or chopped fresh basil
NOTES
1. Feel free to add more fruit, less fruit, or different fruit to this salad. It is your salad so personalize it to your liking. Also, remember you don't have to garnish the salad. Everyone is not a fan of fresh mint (or basil).
2. I like to allow the salad to refrigerate overnight so the fruit can marinate in the dressing. This usually causes the fruit to release water. Before serving, I drain the dressing from the salad (with a colander) into a bowl. Later, I reduce the dressing into a syrup and use it on pancakes and the like. You do not need to serve the salad with the dressing because, if refrigerated overnight, the fruit will fully pick up the flavor of the dressing.
Take the time to enjoy this salad and strawberry-lime soda with your loved ones. If you have small children, let them help by taking the fruit from the cutting board and placing it into the serving bowl. Who knows, if they treat themselves to a few pieces of diced fruit while helping, give them a quick wink of the eye.

Vinaigrette from Deborah Madison's The New Vegetarian Cooking for Everyone
Ingredients:
1 large jicama or 2 medium - about 2 pounds, grated, diced, or sliced into 2-inch matchsticks
1 clove garlic
1/8 teaspoon salt
grated or minced zest of 2 lime
2 to 3 tablespoons fresh lime juice or lemon juice
2 tablespoons chopped green onion or finley diced shallot
1/2 jalapeno chile, seeded and minced
1/2 teaspoon cumin seeds (or a heaping 1/4 teaspoon ground cumin)
1/2 teaspoon coriander seeds (or a heaping 1/4 teaspoon ground coriander)
1/4 teaspoon dry mustard
1/3 cup olive oil
2 tablespoons chopped cilantro
Recipe summary: bloom spices in oil. Add remaining ingredients (except for jicama) and let sit for 15 minutes. Grated, chop, or dice jicama and stir in vinaigrette. Season with salt, pepper, and more lime juice, if needed.

Poppy Seed Dressing ~Salad Dressing Recipe
How to make homemade Poppy Seed Dressing for those summer salads! This dressing is delicious on vegetable salads and fruit salads as well!

Ingredient List:
1/2 Cup Mayo
1 TBLSP Lemon Juice
1 TSP Lemon Zest
2 TBLSP Sugar or Sugar Substitute
2 TSP Honey
2-3 TSP Poppy Seeds
Pinch of salt
Prepare as shown in the video and chill 2 hours before serving. Yields 1/2 cup of Poppy Seed Salad Dressing. Enjoy!
