How To make Fruit Tacos
1/3 c Baked coconut
1 c Strawberries, sliced
1/2 c Seedless green grapes,
-halved 1 md Apple, pared, cored and
-chopped 1 sm Banana, sliced
2 tb Pourable fruit, any flavor
-(found in jelly section of -store) 6 Taco shells
1/3 c Vanilla yogurt
1. Spread coconut on baking sheet. Toast in 350 F oven for 7 to 12 minutes,
stirring often. 2. Meanwhile, in medium bowl, stir together strawberries, grapes, apple,
banana, and pourable fruit. 3. Fill taco shells evenly with fruit.
4. Top filled tacos evenly with yogurt.
5. Sprinkle with toasted coconut.

Is it Taco Tuesday yet? With these fruit-filled pancake tacos, based on a recipe inspired by The Starving Chef Blog, you won’t even want to wait until dinner, let alone until Tuesday.
These pancake fruit tacos are about to become a regular guest at your table. Quick, easy and healthy for breakfast, brunch or dinner, there’s really no wrong time to serve these.
Bananas, strawberries, blueberries and star fruit come together beautifully in this sweet “taco” shell. But why limit yourself? Use whatever fruits you like best or have on hand. Make a fruit bar for the family. Or how about saying that an award goes to the most creative taco?!
Peanut butter can serve as the “glue” that holds everything together (and adds a bit of protein), but we skipped that in order to let the taste of the fresh fruit really shine. Maple syrup is responsible for the extra sweetness on top in our version, but honey, strawberry syrup, blueberry syrup, lemon curd or a nut butter would be great, too. Mix and match ingredients to make your tacos organic or low-sugar to fit your diet.

How to make vegan tacos with jackfruit
520g jackfruit
2 tbsp coconut oil
1 large onion
3 cloves of chopped garlic
1 tbsp cumin
1 tbsp cumin
1 tbsp bouillon
Salt
1 tbsp Dried oregano
800g chunky tomato sauce
1 tbsp sugar
For the Guacamole
1 diced red onion
1 cup chopped cilantro
Juice of a lemon
Sea salt to taste
Black pepper
Chopped avocados
Strain jackfruit and place in a bowl. Pull the jackfruit apart so they are stringy. Set aside.
To a frying pan add oil and onion. Cook for 7 min until onions are translucent and cooked. Add in the garlic, bouillon, smoked paprika, cumin , oregano, salt. Add in the tomato sauce and mix in the jackfruit. Add in any spices that you desire including sriracha. Cook until liquid is reduced. Place in a baking tray lined with parchment paper. Spread it out evenly and place in the oven at 220 degrees C for 25 minutes.
For the Guacamole, Mix everything in a bowl. Set aside.
For tacos. Follow the instructions on the back of the package. Bake for 6 minutes at 180 degrees Celsius.
Once the tacos are ready fill with the jackfruit filing, vegan cheese, guacamole, and sour cream.
